    Can’t we naturally ferment without adding the probiotics from capsule ?

      Good question! You could do a traditional salt brine but I think the oats would turn out salty. And the oats need a starter to get them going. Maybe a water kefir starter would work but otherwise - probiotic capsules are the easiest solution for a wonderful result.
