    Sabudana Khichadi Recipe:
    Ingredients
    - 1 cup sabudana (tapioca pearls)
    - Water (just enough to soak the sabudana)
    - Salt (to taste)
    - 1 tsp sugar
    - 1/2 tsp black pepper powder
    - 1 tbsp lemon juice
    - 1/4 cup roasted peanut powder
    - 2 tbsp oil
    - 1 tsp mustard seeds
    - 1 tsp cumin seeds (jeera)
    - A few curry leaves
    - 2-3 green chilies, chopped
    - Fresh coriander leaves, finely chopped (for garnish)
    - Grated coconut (for garnish, optional)
    Instructions
    - Rinse 1 cup of sabudana under running water until the water runs clear.
    - In a bowl, add the rinsed sabudana and just enough water to cover them. Do not add too much water.
    - Soak for 40 minutes to 2 hours, until the sabudana pearls swell up and become soft. They should look khula khula (separate).
    - Once soaked, check if the sabudana pearls are soft by pressing one between your fingers. If it's still hard, soak for a bit longer.
    - In the soaked sabudana, add salt to taste, 1 tsp sugar, 1/2 tsp black pepper powder, 1 tbsp lemon juice, and 1/4 cup roasted peanut powder. Mix well and set aside.
    - Heat 2 tbsp oil in a kadai (wok) over medium heat.
    - Add 1 tsp mustard seeds and let them splutter.
    - Add 1 tsp cumin seeds (jeera) and let them sizzle.
    - Add a few curry leaves and 2-3 chopped green chilies. Sauté for a minute.
    - Add the sabudana mixture to the kadai and stir well to combine with the spices.
    - Cook, stirring occasionally, until the sabudana changes color slightly to a translucent grey. This should take about 5-7 minutes.
    - Once cooked, garnish with finely chopped fresh coriander leaves.
    - Optionally, you can also garnish with grated coconut for an extra touch of flavour.
    - Serve hot and enjoy your delicious Sabudana Khichadi!
