Blondie Brownies The Best Easy (No-Fail Dessert Recipe) - Gordon Ramsay

    If anyone is looking for the recipe, here it is:
    230 grams butter (~2 sticks, but I would use less, probably 1 and 2/3 stick is good)
    340 grams white granulated/casting sugar (again, I would use less, probably 280 grams is good)
    Pinch of salt
    1 tsp vanilla extract
    2 eggs, lightly beaten
    280g plain flour
    ½ tsp baking soda
    1 tsp baking powder
    240g white chocolate, chopped into small chunks
    4 tbsp dried cranberries
    1. Preheat the oven to 180°C /355°F . Lightly butter a 23 cm
    square cake tin and line with parchment paper.
    2. Melt the butter in a saucepan and whisk in the sugar and salt. (A good whisk now will make the mixture
    slightly lighter and fluffier.) Add the vanilla extract and
    whisk again. Remove from the heat.
    3. Add the eggs to the butter mixture and stir well. Sift the flour, bicarbonate of soda and baking powder into a large
    bowl, then whisk in the egg and butter mixture a little at a time. (It’s important to do this in stages so that you don’t
    get any lumps.)
    4. Leave the mixture to cool slightly, then fold in the chocolate chunks and the cranberries. (If the mixture is too hot, the chocolate will melt.)
    5. Spoon into the prepared cake tin and spread out evenly. Bake for 35-40 minutes until the outer edges are firm and the middle still a little soft.
    6. Leave to cool on a wire rack for at least 10 minutes, then cut into squares before serving. Once cooled, the blondies will keep in an airtight container for up to a week.

      just a note, the cookbook says to use dark brown sugar, but if you do, they do not come out like they do in the video (obviously, they will be darker). For texture's sake, you can use a mixture of the two.

    He uses caster sugar here, which is just slightly finer sugar. If you use a different sugar it will influence the taste and if you use a darker sugar it might influence the final color of your Blondies. But any sugar will do as long as it is actual sugar.

    I made these but with 280 grams of sugar and a bit less butter. I also used raisins instead of cranberries as I didn’t have them. Soooo good! I’d even put in a little less chocolate as they were overly sweet even with less sugar.

    Is this okay to make in a lasagna style/casserole porcelain dish as opposed to a baking tin?

    If tried this for my 1st blondies. You might wanna reduce the sugar abit because the cranberries and white chocolate are already sweet. I love sweet stuff but this recipe is abit too sweet. Overall, very tasty.

    Is it just me did those blondies collapse after they cooled down, they filled the 2 inch tray when they came out and then when they had been cut they were like a 1cm think.

      You can make 1 egg replacement with 2 tsp of water, mixed with 1 teaspoon of flax seeds ground up.
      So, double that for this recipe. :)

    sugar "melts" at different temperatures each time, however it seems that in 2011 scientists found that it does not melt but decomposes. However it is agreed that sugar in fact does melt. (caramel).

      He's relaxed a lot in many of his other shows, minus the Kitchen Nightmares, Hells Kitchen and Hotel Hell. lol But he used to have his old TV show I watched on BBC America called *The F Word* and they have the episodes on RUclips now if you want to watch them. Most of the time he's relaxed on that show. It's an older show, I think from around 10 years ago.

      +Azizinum Dried blueberries, raisins, orange zest, chopped banana chips, huckleberries, lemon zest, dried lavender, pecans, mint chips, espresso beans, fig, walnuts.... uuuh... anything that would normally pair well with white chocolate....

    I don't know which made me drool, more the Chef, or the Blondies? I make mine with butter toffee pieces and nuts, sometimes golden raisins and maple flavor and they are to die for with a glass of cold milk! Honestly, they make your eyes tear up!

      its just a way of holding the paper down the tray, if you observe he didnt fully covered it with butter

      He explains it during the video. To prevent the white chocolate from melting and getting all over the tray and to adhere the paper to the tray. It would also help transfer heat through the pan, butter, paper, and into the mixture from the bottom/sides.

      The cranberries are because blondies are really sweet. Cranberries give a bit of a reprieve from that. Walnuts will work but it won't counteract the sweetness at all.

    What happened to the measurements?????🤔🤔🤔🤔 If you give me a fish, I eat for a day; if you TEACH me how to fish, I eat for a lifetime. Unfortunately, I cannot even eat for a day. No offense, but I cannot make something I never had before without measurements. 2 cups of this, 1cup of that, Etc. Thanks anyways for your effort...
