Dynamite Shrimp | Japanese Appetizer

  • Dynamite Shrimp was actually influenced by the British in Hong Kong. Chinese Cuisine traditionally doesn't use any dairy products. The introduction of mayonnaise into dishes by the British soon allowed for Chinese Chefs in Hong Kong to start experimenting with milk proteins. Shrimp Dynamite has now evolved into a Japanese appetizer popularized by many American Chinese restaurants, including PF Changs. The staple has come to be battered and deep-fried golden shrimp tossed with a honey-mayonnaise light dressing.
    Ingredients:
    1 lb Shrimp
    1 egg
    2 tsp soya sauce
    2 tsp black pepper
    2 tsp salt
    For the batter:
    ¾ cup all-purpose flour
    ¾ cup corn starch
    1 tsp garlic powder
    1 tsp salt
    ½ tsp cayenne or chili powder
    For the sauce:
    ¾ cup mayonnaise
    3 tsp sriracha (hot sauce)
    3 tsp sweet chili sauce
    Directions:
    1. To the cleaned and deveined shrimp add 1 whole egg, soy sauce, salt, and pepper. Mix well.
    2. In another bowl add all-purpose flour, corn starch, garlic powder, cayenne, and salt.
    3. Coat the shrimp in the flour mixture one by one.
    4. On medium heat, heat the oil for deep frying.
    5. Fry the shrimp for 4-5 minutes until crispy and golden.
    6. In a bowl, add ¾ cup mayonnaise, 3 tsp sriracha, and 3 tsp sweet chili sauce and mix well.
    7. Coat the shrimp with the spicy mayonnaise sauce.
    8. Garnish with scallions and red pepper flakes
