Since the shop is on roadside with heavy traffic, there will definitely be sand and dust pollution, which will add to the taste. They should take action to protect the Idlis from getting polluted. I think its run by a family. They seems to fully enjoy their daily routine.

No...they use Aamanaku or kotta Muthu seeds which make the idlis soft and white. It's good for health. Not harmful at all. One of the shop owners said in this video.

I've seen one of the (idly batter) business women uses this to get soft and fluffy idlies. This Aamanaku or castor seed is very good for constipation, eye problems and makes your body cool.
