  • This is the recipe I developed and followed for processing candies in this video.
    Materials required:
    1. Use mature and unripe papaya- 1 Kg after dicing
    2. Water- 1L
    3. Sugar- 1Kg
    4. Dryer (optional).
    5. Packaging materials ( If you want to store the candies)
    6. Sharp knife.
    7. Saucepan.
    8. Bowls and buckets.
    Procedure:
    1. Take mature and unripe papaya. Remove the damaged/ injured parts and wash them properly in a clean water.
    2. Peel of the skin using vegetable peeler and make sure that the skin is peeled off properly without any trace. (no green portion should be seen)
    3. Dice the papaya in desirable shapes and sizes. You can be creative when it comes to this procedure but make sure that the cut pieces are of uniform shape and size to have a uniform cooking time.
    4. Wash the sliced papaya pieces in clean water for 3 to 5 times and make sure to wash off all the dirt and unwanted substances.
    5. Prepare the sugar syrup. For the sugar syrup, measure the sliced papaya pieces and take equal amount of water and sugar, i.e. the ratio of papaya to sugar and water should be 1:1:1 (1Kg papaya: 1Kg sugar: 1L water) You can follow the same ration even if you are preparing in bulk.
    6. Add the papaya slices into the sugar syrup and cook it for 30 minutes or until a prominent color change is observed (the papaya pieces will become yellow in color), after the color change occurs, stop the cooking procedure and let the mixture cool.
    7. Do not take out the papaya pieces after cooking, let it stand in the syrup for a night to induce proper absorption of sugar.
    8. Dry the candies in a dryer at 35 to 40 ˚C to dehydrate the candies and after the dry the candies under a fan for 2 to 3 days until they are dried properly (becomes leathery and hard)
    9. After the candies are dried, store them in air tight container and avoid contact with air so that the candies do not absorb moisture because candies will be damaged after absorbing moisture from air.
