As I really remember Babe each time I hear the Saint Saëns organo symphony, I cannot avoid to remember Tom the cat playing piano and making those kilometric extensions of his right pinky finger regarding the incroyable, long and beautiful fingers and hands of gifted pianists like Jeneba... Sublime sound, sublime concert... Extraordinary.

I can assure you it's no cheat sheet! An orchestral musician has to be able to move from one piece to another with minimum preparation. To do that well is an extraordinary level of musicianship. The soloist has the freedom to practise their part and commit it to memory so that they can develop their performance to near or sometimes actual perfection. It's another aspect of musicianship.
Her entire Family performs like that... Especially if they're performing a Concerto... The older Siblings generally perform without sheet Music if its a Concerto.
What a family ! I thought it was Isota who I saw in the Mozart triple concerto . Well Janeba has musicality and plenty of technique . Wish the orchestral strings had better intonation .

But... if you want to hear a mature version of this Saint Saens piece, check out her contemporary, Alexander Malofeev' performance at age 12, as laureate of the 2014 Tchaikovsky Competition(he is 18 now). Performed by the State Symphony of Russia, conducted by Yuri Tkachenko on youtube. Mr. Malofeev is probably the best pianist of his age group in the world, and his performance of this crazy complicated piece is astounding. Check it out.

Pretty much every soloist memorizes their music, it's standard. The musicians in the orchestra almost never do.
