  • Welcome back to our friend Bank's house, a beautiful home in Northern Thailand's province of Chiang Mai. IN THIS VIDEO you will see Bank's friend preparing Laap for our lunch (*he has previously won First Prize for this Thai Laap Recipe*), and then you will join us for lunch as I sit down to LEARN some Northern Thai language and TONS of new info about the unique local herbs that must be paired with Laap.

    Really love when you take to time to show us how local work the food, prepare recipe, step by step, seeing the ingredient. The colour of you image are incredible, contrast perfect and the tint of red are so beautiful in that meat. Good job of camera on that video Uncle Lan . So many things to take away as good memories but that was definitely top! These kind of experiences were highlighted the countryside life for me all those years ago when I fell in love with the Northeast… Now the love has continued to the north and things are still going great :-)

    14:41 I didn't know you mingled with vampires🧛‍♂️🦇😂.That rooster took me right back home to Samoa🐓😂. Hi Joel! What a beautiful home and property your friend Bank has. The meal looked so Lam as well and very healthy 😊. I've only had a Filipino dish of cooked pork blood, but I'd love to try that one day. The number of fresh herbs you got to try is amazing!🌿I love how different the food, language and culture are between northern and southern Thailand even though it's the same country🇹🇭. I bet you always learn something new everyday! The Peace House looks awesome!     The dishes look amazing. My husband and I started a garden this year and surprisingly enough...it provided us with tasty veggies. I discovered you Joel when you were making a vid with Mark Weins.       My spearmint sprouted and smells heavenly!! The basil also, oregano and one more. I love to make soups etc. and with fresh herbs there is a difference! I will def see you at the livestream!! Thank you!

    Saibaidee Joel(s) -[why are there two Joels in the thumbnail?] and Li! Man those Laaps looked SAAP SAAP! I’ve never had raw pork laap before since it’s hard to find fresh pork to make laap with. I love that they added pork cracklings to the laap to give it contrasting texture to the minced meat. I just happened to make crispy pork belly tonight too! Uncle is a character I must say. Totally reminds me of my dad. Haha. Cocktail and shots with laap and then taking photos. Hope you and Li are having a great day!

I have a big family so when we get together it is so insane!!! I don’t know how to live stream it, but I will try.       Hey Eric great message thanks for the early Comment :-) very happy as always to hear about an interest in Thailand, specifically the language! The best way to learn to read and write is to learn which way you yourself will learn the best, and then whether it is purchasing the books for yourself or joining up with a class, or maybe even starting sort of a competition with some friends. I sat on my bedroom floor alone with kindergarten books I bought for 1.30$ at the 7-11, did that for about 90 days. Studying about three hours a day, that’s what did it for me!

    Love Laap (Laarb? whatever,) and love this place! Would REALLY like to try this version with all the herbs on the side, too. We have a few growing in our yard but nothing like that! Sometimes I can hear the auntie next door chopping Laap at 5 AM. Been to a lot of good Laap places in the Chiang Mai area but not award winning, home made, Prik Laap with all those side herbs!

    I eat cooked laab many times. My Chiangrai wife is a 3.3 stars Michelin chef at home, fantastic! Be careful of the raw ones though, raw meat contains parasites and harmful bacteria that we can’t see. Eating them uncooked in a long run will produce visible effects on the skin and eyes. The skin and eyes will stray away from its original color. Skin turns yellow and eyes yellowish-red. Won’t go into the details of what it does to your organs. It’s pretty obvious. They say that alcohol will wash down all harmful substances right? Well, not entirely. Good luck! Thanks for the video Joel!

    Looks great! I would love the opportunity to try raw pork and blood but unfortunately I don’t think I can acquire pork that isn’t raised on huge farms here in Pennsylvania. Maybe I need to do some more searching further North.

      This is a good thing to think about, I would not just try any raw pork you see they did kill the pig themselves just before we arrived, and the only other time that I have had raw pork and raw blood was in northern Laos, in exactly the same situation!!

      Pigs with much land to roam are safe. When they are raised in small areas very close to each other all day everyday they are constantly stepping in and eating off of old poop. You are what you eat, so huge farm raised pork is poopy meat unless you fully cook.

      Yeah, I would definitely think twice about eating raw meat, especially coming from a background (if someone grows up) NOT on a farm or, nowhere near a farm... ah, its a hard question to think about.     Hi Joel and Li ❤️. Amazing video thank you. Again s beautiful This home and wonderful fresh food. Love the use of herbs in Thailand. I would definitely try cooked laap. May be a bit scared of the raw blood, not that brave yet 🤣. We eat a lot of raw wild herbs in my home. Not common in SA but I love foraging. Our favourites are lamb's quarters (also called goosefoot) very sweet and nutty herb, amaranth leaves ( can be eaten raw or cooked like spinach), purselane (succulent herb that is slightly sour and mucilaginous), wood sorrel (nice and sour and tender), sow thistle and dandelion (both slightly bitter but delicious when young
    and tender in salad and sauteed as a green and common mallow (also known as cheese weed) , wonderful added to soups to slightly thicken the broth and has a very mild flavour. Ok probably mentioned enough for one day 🤣. Have a beautiful day and much love ❤️🤗

You're a teacher so you understand that if you don't enjoy something learning is 10 times harder. Having yourself and Li as my guests in SA would be a dream come true. I would adore having someone around that appreciates what I love and shares my passion. Most of my friends talk about make up and shoes. That bores me to tears 🤣🤣.       we grew up eating g purslane on the rainy season. in Spanish they are called verdolagas. it seems only the poor people knew about foraging for food.

      On this occasion, you are correct. I did not have any blood. Li is influencing me now and, yeah, maybe Im getting older as well...
      however, I have had raw pork AND raw beef many, many times. In Thailand, and Laos. Big part of the traditional food here, for sure.

I am imagining a few things involved in life expectancy, back in those days humans did not live as long and so we did not need to be quite as careful of blood-borne parasites.     Very interesting variant of Laab. In Laos we do not use pork, just only poultry, beef and fish, similar to Isaan. Btw 3:10 North of Laos is not well known for the traditional Laab. Because of the entourage of the king along centuries their cuisine is unique and more exquisite (see the Or Laam f.e.). The well known today's Laab is more of Vientiane origin, wide spread later to the North-West and the South. You will barely see North Lao people eating beef or poultry Laab, just their own raw fish Laab (mostly of carp's meat). Mostly the ancestors of the Isaaners were from the Vientiane Kingdom that's why the Laab is almost their "national" dish.

      They are banned here in the U.S eating raw uncooked and blood foods

      @@electricslider1091 Because in the U.S food like this is more likely to become contaminated. It's super fresh in places like Thailand.

      It is fresh, yeah, actually these herbs came all from his garden and even the pig was killed that day. BUT, I still cannot condone eating raw pork. It is definitely a risk!
