Don’t be confused with noi and roi. Noi is mean little, roi is mean hundred. They will understand when you say phed roi that you actually mean phed noi, but at the coffee shop if you say wan roi it means 100% sweet. 😅

I think he got confused the "kai dao nieng" is because the word "nieng" in lower tone is one, but in higher tone is "steamed". So "kai dao nieng" could be confused as "steamed fried egg".
You actually got it right besides the tone of the word "nieng". And after a little pause, he would have gotten it through context clue. The tone is a little hard but I'm sure you can get it with more practice!
As a Thai person, I love and appreciate your effort in learning the local language while you're visiting. You're my role model to also learn some local language when I visit new places too.

Next time you go back to Taiwan get the 3 cup chicken (三杯雞) that one is like the combination of both dishes you got! (Chicken is braised with soysauce and cooked with basil, ginger and chili.)
