  • We are in Chengdu, and its time for some street food!
We go into this without a clue what we are going for.
We tried chicken feet, which we were not a fan of...along with some other amazing snacks and finished off with a revisit to durian!

22:11 They were telling you the price, one yuen for one, not that you need to get a big quantity. The noodle is called DandanMian, literally means "shoulder pole noodles", because in the old days the vendor would carry the cooking utensils on the shoulder with a pole and walk all over town to sell the noodle. It's basically stir fried minced pork with garlic and chili with spices and then pour over the noodle.

  • @joey3291
    @joey3291 7 месяцев назад +25

22:06 The man was just asking you to pick whatever sticks you want and put them all in the plate, and the price was 1 yuan per stick. It's perfectly fine if you only want one of them. Probably a translation app would be helpful next time.
Also, the crispy pork is unhealthy, basically anything that are extremely delicious is not very healthy🤣

    1. at3:00 , the food you have ever eaten this in Shanghai (cost 40 yuan), it's just prepared in a different cooking style. |
the flavour you can call "麻辣",spicy and numbing.
    2. Chicken feet are quite common in China, but you might want to try the local spicy and numbing rabbit head, which is quite distinctive. However, just like when you tried chicken feet, you should be mentally prepared. Don't think too much about it when eating these things; just eat boldly and you'll be fine.
    3. at 20:40 ,that noodle dish is called Dan Dan Noodles, which are quite famous. They are different from Wuhan's Hot Dry Noodles, as they have a richer flavor. Personally, I prefer Dan Dan Noodles, but both types are delicious. The most important part of Dan Dan Noodles is making the 'Saozi', which involves finely chopping the best quality pork hind leg meat, then stir-frying it in hot oil. This is mixed with soy sauce, sesame paste, chili oil, Sichuan pepper powder, minced meat, Sichuan preserved vegetables, bean sprouts, pea shoots, chopped green onions, and mashed garlic to create the final dish. it since 1841 ? i am not sure.
    4. at 22:47 The owner said it's one yuan per skewer. They charge based on the sticks inserted in the food. You can buy a tofu skin; you misunderstood him. It's possible to buy just one.
    5. at 27:44 the boy was pulling a dog ..LOL...

You should try Chengdu’s Mapo Tofu and twice-cooked pork, which are representatives of Sichuan cuisine. Especially the hotpot should be tasted.

If you are zero-tolerance for spicy, maybe you can choose GuangZhou as your next city. That's a food paradise for zero-tolerance-spiciness foodie. Guangzhou Dim Sum and desserts will amaze you. The "dan dan noodle" you've had is a famous sichuan style noodle. In chengdu, you could also try 钟水饺(seasoned dumpling) , 甜水面(sweet cold noodle),麻婆豆腐. In china, each region has their unique way to cook noodles. The noodles in Chengdu is more in spicy, sweet and numbing. However Xi'an is also a heaven for the noodles lovers but in more spicy and sour type.

Firstly, the names of authentic Chinese dishes and Western cuisine are typically presented differently. Western dishes, especially formal ones, often list the main ingredients explicitly.
The first dish is "锅巴虾滑," which includes prawn paste. I remember you've already tried prawn paste twice. Prawn paste is mainly made from shrimp meat, starch, and egg whites. This snack also includes "Guoba," which is essentially "slightly scorched rice."
The second one is chicken feet. Chicken feet are usually served as a "snack with alcohol" in China because they can be consumed slowly. Chicken feet are rich in collagen, somewhat similar to one layer of pork elbow (not fat). However, besides appearance, another reason why Westerners may not like them is that they contain small bones, which some find inconvenient.
The third dish is 脆皮五花肉(crispy pork belly.) A whole piece of pork belly is boiled with various seasonings, then cooled and coated with a full-egg batter before deep-frying (it can also be baked in an oven). The reason for using a microwave is for simple reheating. The cucumber on the side is mainly there to cut through the richness. Strictly speaking, it's not considered "healthy" since it involves deep-frying (or baking). For many Westerners, the notion of "healthy" often equates to salads haha.
The fourth one is 担担面(Dandan noodles.) The recipe is quite simple: noodles, minced meat sauce, peas, scallions, garlic, and seasonings. It might be too spicy for your taste.
The fifth one, 芝士烤榴莲(cheese-baked durian,) isn't considered a traditional Chinese dish.
About Xi'an, I won't mention tourist attractions here. Let me tell you about traditional Xi'an snacks. 肉夹馍 (Chinese hamburger), 凉皮/酿皮 (cold noodles), 胡辣汤 (spicy and sour soup with assorted ingredients), and 羊杂 (sheep offal). If you don't understand Chinese, you can match the characters with their translations. Xi'an is known for its noodle-based dishes.
Regarding Beijing, besides Peking Duck, there isn't much else for you to try. 四季民福's Peking Duck is excellent. There are also two traditional Beijing snacks that you might find "challenging": 豆汁 (fermented mung bean juice) and 炒肝 (stir-fried liver).

What the noodle you eat is called Dandan noodle. Dandan noodles, a specialty snack from Zigong, Sichuan, China, is named after the traditional method of carrying a pole and calling out to sell goods. The noodles are delicate and smooth, with the main ingredients including red chili oil, sesame paste, minced meat, Sichuan preserved vegetables, crushed peanuts or peanut powder, ground Sichuan peppercorns, red soy sauce, minced garlic, and chopped scallions.
Legend has it that the dish was created by a Zigong peddler nicknamed Chen Baobao in 1841. As it was initially carried and sold using a carrying pole along the streets, it was named Dandan noodles.

The first dish you tried, is the same shrimp paste chunks you tried in Shanghai, but cooked differently. It is Guoba Xiahua, guoba is the burned rice at the bottom of the rice pot, and xiahua is the shrimp paste chunks. This one is stirred fried instead of the mala soup you had in Shanghai.
As for the chicken feet, contrary to western believe, it is not dirty at all, as chicken feet have a layer of web covering them and it is removed before cooking.
    Cute panda outfits btw.

Although there is not much meat, you can clearly feel the texture of the meat inside. In addition, these foods are basically It is mainly braised and requires dozens of spices and medicinal materials to cook, so it is generally not cheap. You'd better go into a mall or some good-looking restaurant to order some plates of stir food and a cup of rice, that's what we daily have for dinner and lunch at home. And that will taste even better.

We munch on chicken feet, it's not a filling snack, it's a fun snack and we like the squishy texture. Chinese like texture - it's an extra dimension barely explored in western cuisines. Some snack stands do sell deboned chicken feet - Gen Zs, whayagonnado?

Chicken feet are delicious in Cantonese/ hongkong dimsum. They are soft and just fall off bones.

I’m glad you gave durian another try! It’s an acquired taste but definitely worth acquiring! It’s one of my favorite fruits but the first time I had it as a kid I cried but it smelled so bad to me lol

The key to making very crispy pork is to make sure it is absolutely dry before roasting. You can actually make that using an air fryer and common ingredients that you can find in your local Asian supermarket or probably Tesco's at the Asian section. The different shades is the marinade that's made its way into the meat.

22:12 In some parts of China, especially in Sichuan Province, hawkers sell all kinds food on bamboo sticks (usually cut in small bits) and you can take a tray to pick whatever stick you want.
They will count the number of bamboo sticks afterwards and charge you the respective amount. Usually vegetables are ¥1 per stick and meat might cost a l•bit more. So when you were there asking for one tofu skin, the man told you that those are all ¥1 per stick and he was trying to pass you the tray so you could pick whatever you want. 😊

I laughed almost the whole time and watched the video part of you trying chicken feet. I also know that foreigners are resistant to chicken feet. In fact, after tasting it, you know that its taste is not as terrible as it seems. You just need to overcome some psychological barriers. I'm glad you all have the courage to try. This part is quite interesting.

I think the first dish was shrimp scorched rice. Westerners just don't see the animal parts in food. Chicken feet are just skin and tendon, rich in collagen. There is nothing strange about them.
The tan tan noodle is pork, seasoned with chili oil, sesame paste and peanut butter. Most of the street food look pretty good. Good durian are like eating ice cream. Either you like it or you don't.

    1. the "salt and chili" stuff is a teppanyaki style snack, one of the main ingredients is shrimp paste-minced shrimp meat blended with corn starch and other spices. that's why you can taste shrimp there.
    2. the noodle dish is called Dan Dan noodle, basically it's plain noodle without topping. what make it different is the spices, chili pepper, sichuan pepper, pickles, and other stuff.
    3. the tofu skin dunked in chili oil is called Bo Bo Ji or cold sichuan skewers, they are served in batch, 1 yuan for 1 skewer, that's what the vendor pointed out to you and made you confused, lol. usually people eat a lot of those skewers and barely eat just one. if you just want to try it, you can use your translation app to say stuff like "can I have one skewer? I just would like to try it", and usually the vendor will give you one for free.
