Incredible. About two months ago I had to overhaul my eating for health reasons, and I went back to basics and tried to make the ultimate healthy, cheap, quick, tasty meal that was all fresh and whole foods, and I came up with almost the exact same dish, minus the chickpeas and nuts. By the time the rice finishes cooking, the the rest of the meal is prepped and cooked. Rice is easier on the stomach than other carbs, the garlic is working overtime for your health, I also go heavy on the pepper and ginger. Broccoli, especially burnt/charred slightly undercooked, is so satisfying and tasty, it’s really overlooked. You can also tweak it for Asian flavors, or European flavors, or Mexican, and if being vegan isn’t a necessity, you can add prawns or seafood or a little beef. But honestly in its vegan form it’s so satisfying.

I love this recipe (as in going to make it tomorrow) as well as your tips! Just as an alternative with the broccoli though: I always use the stems, but I peel them. It doesn't really take long, and then the stems cook just as quickly and tenderly as the florets. I started doing it back when you could only buy whole heads of broccoli (crowns weren't a thing yet) and I couldn't bear to waste the lovely stems! Thanks again for an inspiring recipe!

Made this tonight. I’ve made a handful of your recipes. All have been great. This was maybe my fave so far. I’ve been V for 25 years and always looking for something new, easy and delicious and nourishing. I’m big on stir fry style take out food as well. So easy to make it cheap and healthy. I swear This is the kind of food that I lived off of the first 10 years of living on plants and what I still go to a couple times a week at least. Simple, affordable, nutrient dense and so tasty. Great video! Can't wait to try it! Btw I am a HUGE fan of your roasted red pepper sweet potato soup (which I call winter soup)! I have a tip that I learned this week: to cut the broccoli and avoid all those small seeds (florets) lying around you can cut the smaller stems and open from there with your hands. That way the "florets spill" is avoided! It might be more time-consuming though
Love the recipe. Nutritionists say brown rice is better than white rice for health reasons. But many, including me, don’t like the taste of whole grain rice. I have cracked it. One part whole grain rice, one part white rice, one part brown lentils. Delicious and nutty with a very faint black pepper note to the taste and contains more fibre and protein than white rice alone. One tip, the white rice has a slightly shorter cooking time, cook the brown rice and lentils for 5 minutes before adding the white rice and then cook until all 3 are cooked together.
Just wanna say that I love your recipes, basically only cook your dishes now ! It is balanced, nutritious and delicious and was enough to get rid of the last plant alternative I was using. Supporting you from today ! Keep the good work in 2024 !

I’ve been vegan since 1979 and still have those ‘protein withdrawals’ of sorts. Hunger pains are definitely hormonal so the ebb and flow of how much you need to feel satiated changes daily. Probably more so for women , but it’s something we all should keep in mind.
My mom became vegetarian in 1969 after reading Diet for a Small Planet. Later she was macrobiotic for 10 years. Now she's 88, she started eating chicken a few years ago because she was "always hungry."

New subscriber here. Almost 10 years ago we tried the Forks Over Knives vegan diet for about a year and I dropped some serious lbs. I went from about 265 to 220 over the course of that year, and then we just kind of went lax, got bored, got more busy, etc...insert all the excuses here. I've just retired a couple weeks ago and really want to focus on my health going forward. This recipe looks great and I'm looking over some of you other videos and getting very interested again. I'm seeing in the comments that quite a few folks focus are adding vegan/vegetarian meals into their meal planning...say 3 or 4 meals a week to build it up in their lifestyle. I really like that approach! I think we'll start working that into our plan as well. Having great recipes and ideas will definitely make a difference. I'm back to floating around that 255-260 weight again and I'm missing the energy and the relief on my back and knees at the lower weight. Looking forward to digging into some of your past videos!

This looks great! I’m trying to go plant-based, but not there yet. Easy, tasty, re-heatable meals are a must. One suggestion: RICE COOKER. Life-changing and not expensive.
I’ll be making this tonight for my lunches this week. I’ll substitute the rice with quinoa, better for my sugar levels since I’m diabetic. Might add some red bell pepper also. I'm going to try this meal. After losing my husband last year and cooking for him with pleasure for 13 years, I have a hard time now cooking for myself. I eat out alot and when I do cook, I don't like the food I cook.

I do not like the texture of broccoli stems, however when I rice them with my food processor I don't mind them. I have always loved chickpeas. I am not vegan, don't really plan to be, but certainly open to having 2-4 vegan meals per week. Great videos.

Even though you say that you don't want to spend much time preparing meals, have you tried using dried legumes yet? I know it's quicker with canned but much healthier if you boil your own. One suggestion: RICE COOKER. Life-changing and not expensive.
Rice cookers are a nightmare, they take forever. Pressure cooker far better for rice dishes.
I’ll be making this tonight for my lunches this week. I’ll substitute the rice with quinoa, better for my sugar levels since I’m diabetic. Might add some red bell pepper also. Came to look at the ingredients and ask if I could get away with leaving the chili out as I can't eat it, and it says it's optional, so I am pleased! I love your recipes and the detail you go into in explaining how to sub things as well.

I'm going to try this meal. After losing my husband last year and cooking for him with pleasure for 13 years, I have a hard time now cooking for myself. I eat out alot and when I do cook, I don't like the food I cook.

I appreciate you for sharing this recipe. It was delicious! I subbed coconut aminos for the soy and made a honey-roasted chili peppers sauce instead of the garlic chili sauce. Came out great! 👩🍳
I do not like the texture of broccoli stems, however when I rice them with my food processor I don't mind them.

Happened to see another post of yours and I followed with this. Love the way you present the cooking part (concise and to the point). I never met anyone else who loves garlic as much as I do. Even though you say that you don't want to spend much time preparing meals, have you tried using dried legumes yet? I know it's quicker with canned but much healthier if you boil your own. You can refrigerate/reeze the surplus and have it ready. Also, where did you get that nice skillet cover? Thanks.
