Let’s make MOLLEJAS!
Now mollejas are a favorite in South Texas and in Mexico because they are super delicious. They’re called “sweet breads” in English and are the thymus gland of the cow.
The flavor is a light mineraly/earth flavor but I promise…when you cook this delicacy perfectly, it is some of the best eating you will ever have and you WILL cook them again and again.
There are different ways to cook them and in this video I’m gonna show you the ARNIETEX way.
So what makes a perfect molleja? You want a perfectly soft and moist texture on the inside AND a nice crispy crunch on the outside and there are a couple of things you need to do to reach that.
I like to filet them for faster cooking and season them with a little APC WOW! then get them on direct coals with a low to medium fire. Or like in this video you can start them indirect for the first hour or so while flipping to get some color and smoky flavor going. I like to wrap them for the next hour or two depending how hot the fire is with a little beef tallow or oil to help fry up the outside while the inside cooks to perfection. I like to finish them with one last little sear before chopping them up for some tacos with a salsa verde…yeahhhh buddy!

Just pulled some off the grill and they were wonderful. The smell was way too good so resting time was like punishment. I've never grilled them before and pulled them off at 185°. Perfect medium to medium well with grill temp at 275°. They were beef butter and delicious. Only took 2 hrs from start to finish. Thanks for the recipe Arnie Tex, you're the best!

I've only ever seen them once at a taco shop. I passed because I didn't know what they were but I'm definitely going to go back to try them now.

I used to do that brother but a lot of the flavor stays in the broth. Think about it like any soup, the meats give up their flavor to the broth and thats what makes those soups so good. You still lose some to the fire but not nearly as much, try without boiling and see if you like them that way. For boiling I would jaccard them then cook with some seasoning and garlic, onions and beef base, pretty good but again but not as rich in flavor imo.
I bought some mollejas about a month ago, and have been waiting for a good recipe can't wait to try it. thanks!

What an interesting way to cook sweetbreads, I would not have thought to cook them slow like that. I cooked them a few times many years ago when I worked as a fine dining chef but it was pan fried with a wine sauce. That meat is almost impossible to find at normal grocery stores but I will have to check at a Latin butcher. Thanks Arnie!

Came from south Texas “Harlingen” love them but up in Arkansas they come off angus beef and are tiny. Not like South Texas. People up here don’t even know what they are! One butcher did know and he got us some from the shop he works at. Says no one asked about them but they are his best cut.....although small I don’t want to dry them out.... so...I’ll do the best I can. My family was able to master cooking these. to the point that we had other family and friends asking us to cook it for them. The secret is boiling them for 20 -30 min and then seasoning them and butterfly them down. Once on the grill keep flipping them till they start foaming heavily. The trick is to keep flipping them often so they dont burn. They come out super buttery on the inside and crispy on the out. Im curious on the smoking technique though might have to try that next time. Any tips on where to buy them, most of the meat markets in the 956 have really fatty ones.

I first had fried mollejas at a place near Uvalde… the lady wasn’t sure if the guerro knew what he was getting. Loved them. Came home and saw about smoking them and said that’s me. Gotten pretty good. Gave some to some coworkers who grew up with them and they loved it. Also love the comment about crawfish brain…

Most grocery stores and meat markets all sell them here in south Tx, try your hispanic markets. Try Fiesta grocery chains, I know I been to one in Forth Worth not sure if Dallas has one.

I do them on my pellet grill. I wrap in butcher paper since they have enough oil imo. Then I crisp them up on my griddle since I still have other stuff on the pellet grill.

These are glands. Not meat, but inner organs like kidneys. Delicious prepared this way.
