These egg rolls are so good that I don't even like egg rolls from Chinese restaurants or panda express any more because they aren't anything close to these. I've made these multiple times and my family and friends love them so much!! Thank you for a fabulous recipe!! And yes, to anyone thinking about making that sauce, definitely make the sauce! Its amazing!! Oh another thing is, if you want sweet Asian chili and don't know which one to buy, I recommend Pantai brand. You can find it at your local Asian market.

Cutting/cleaning whole killed chicken is so satisfying...if you do this video can you explain some of the traditional herbs that go in. I feel like I’m always missing something.
I suggest freezing it when they are done wrapping. If you freeze the filling alone and thaw it out later, it will be too watery. Hope that makes sense.

When you said you like more meat, I thought you would be closer to 50% meat. That ratio is what I would call a standard egg roll with 'some' meat. (but I'm a real carnivore)
I alway just fold my left over sheets and fry them and add some salt after I take them out of the oil. I Just love the crunch

I add soy sauce instead, no oyster. You can also buy vegetarian oyster sauce which is made from mushrooms.

Do you have to soak the wood ear mushroom first? If so for how long?
It you buy the dried ones yes, soak them in warm water for at least 30 minutes to an hour. If you're using fresh ones, then you don't need to soak.
Will the eggrolls be soggy if I do all the prep work of rolling them into the wraps put them in the fridge then fry them the next morning?
