The best part is that you can pop them into the air fryer and they’re as crispy as if you were to deep fry them. It is so much easier and healthier. I made this today. Nice trick with the 7up and coconut and brush. I used coconut milk mix with sparkling water instead. I brushed both sides with the coconut milk instead of the egg white and it worked just as well. What I did was I put them in the oven at 140 degree Celsius for 15 minutes first. This way, it will remove any excess water from the wrapper and also precook the raw filling. So when I cook it in oil, it doesn't explode or burn and doesn't absorb too much oil.
Thanks very much for sharing your pre-cook in the oven trick. It doesn't dry out the filling? Also, what are the steps you use when freezing the rolls? Do you follow the same steps before freezing, or do you oven pre-cook the frozen then fry the rolls on the day the rolls are served?

Vietnamese Egg Rolls are one of my most favorite foods.... they taste so good but they definitely need to be CRUNCHY--- they absolutely must have that very distinctive CRUNCH... I fry mine in Peanut Oil and love dipping them in a Fish Sauce mixture with the garlic and a bit of brown sugar, vinegar, etc etc... I could eat these Vietnamese egg rolls every day. You can fried before hand about 90% done, keep in fridge or freezer then fry again when needed, remember to use small to medium heat , don’t put too many in the pan when frying and adjust the heat so that the spring rolls won’t burn
