    His restaurant has a different feel compared to most in this series so far. Theyre mostly dimly litted rooms with a more grand feel to it, but his place has a more laid back, chill vibe to it, and strikes unique, kinda like how jazz is too

      Papa Panda You don’t need an audience to push you to be a good father. You have what is called, “paternal instinct.” In the extremely unlikely event that you don’t, a RUclips audience will be of no help. Should be good though it usually comes pretty intuitively. We have been doing this for thousands of generations you know! You’ll be great! Go dad!

    So happy to see Saito san on the show. I’ve been to Sushi Note once, high quality omakase with reasonable price. Saito san is a funny guy. 👍👍 love this place.

    Finally! Finally, I've heard a true sushi-master say that the "Swedish gravlax" is a kind of preparation for sashimi. Never thought it would happen. But as a Scandinavian, I'm proud to present the idea of "gravlax": Cured Salmon with dill, salt, sugar, and pepper, -as are the more traditional flavors. There are much more adventurous and modern spices used today! There really are no limits. Anyone can make their own curated salmon _ just don't forget to freeze it either before or after making the curing for at least 48 hours to be safe. It's very important, as it kills the parasites that may be in the salmon.

      @@johnchristian8685 Gutsu For starters, "gravlax" is the Swedish name for the dish, which in English is "cured salmon".The traditional recipe tastes salty-sweet and the dill comes through quite a bit. The texture is moister than smoked salmon, well, since you freeze the fish before eating. The salt/sugar/spice mixture seems to also draw out the oils from the fish.
      Of course, you can easily make it Asian in flavor by instead using fresh ginger, lemon zest, and cilantro, for example. Just make sure you have the right balance between salt/sugar to make the curing process happen.

      @@samokada Perhaps you're right. But, I would never take that risk. The red meat just makes it impossible to see if there is any, so you'll have to eat on faith alone then. I'd rather not. Cured salmon is still lovely to eat after being frozen.

    Crazy to think my buddy and I just randomly went to his old spot, 4 on 6, to see if it would be any good. It was amazing!! Sushi Note is amazing!! Amazing chef and person.

    I could easily see me going in there. Dropping a couple of bills on the counter, and tell him make to me some sushi. His choice. I have never hear of any of those fish. Expect for the trumpet fish. That would be fun.

    Saito is the best to work with..I wads lucky to be hired at his former 4 on 6 restaurant in sherman oaks..taugh me so much believed in me great lunch meals for employees and every sunday jazz jam inside the shop..UNIQUE..And beer ....LOVE AND MORE SUCCES SAITO ZAN...OSSSSSSSSSSHHHH!!!!!!     I had been to the restaurant and served by saito san, it's in sherman oaks, ca. Small restaurant. $100 Omakase will get you 10 pcs of nigiri and a handroll :)

      Most Americans only eat 2 types of fish. Tuna and Salmon. There are thousands of variety of fish and Japanese eat about hundred types. Same with beef, most Americans only few a few parts of the cow while Japanese eat just about every part of the cow, none is wasted.

    That Tachiuo is also available (though sparsely bc the chinese reserves theirs ahead of time) here in the Philippines and is my favorite fish. Especially when you clean it and let it dry out in the sun and then fry it YUMM
