I love cooking and eating fresh veggies year round but they taste especially delicious right now when they’re at their peak here in East Tennessee. I don’t have a garden but I do have lots of local farmers markets in my area and even my big chain grocery stores carry locally grown produce this time of year. So today we’re gonna make some delicious recipes featuring lots of fresh summer veggies. And these are family style recipes that might even have your picky non veggie lovers coming back for seconds.

I am so jealous of your beautiful tomatoes. I grew up in the Midwest with their wonderful tomatoes. Now we live in Las Vegas and really can’t find good tomatoes ( I’ve been spoiled ). Our tomatoes come in from California and are picked early for shipping, not given a chance to ripen on the vine. 😞 I love your videos and try many of your recipes. Hi Mel!! My favorite thing about Summer is all of the fresh veggies and fruits. I'm lucky to live in a rural farming area with a large Amish and Mennonite community so besides my own garden, I have easy access to beautiful, fresh produce.These casseroles are perfect timing and they all look delicious! I was planning to pick up some veggies and fruits on my day off this week so I will make a list to be able to make at least one of these this week. It's going to be hard to chose which one though. Since I'm just cooking for myself I'll cut the recipe in half and will still have leftovers which I love. That's why I'll spread the recipes out over a few weeks. I'm with you, Mel, on the cream of soups. They are a staple in my kitchen and I don't care what people say about them. Lol! These recipes are a wonderful and delicious looking way to use the fresh veggies that are so abundant and cheap right now. These made me happy!! Thank you, as always, for all of the hard work and dedication you put into your videos. I hope you and your family have a blessed and beautiful week. 💖

Your squash chicken stuffing casserole is exactly the recipe, minus the chicken, that we serve at Thanksgiving. That’s how good it is! Sometimes you can get away with summer squash in November in California but butternut squash works just as beautifully.
I love butternut squash and it's funny, I never thought of making it in the fall. I think it's going on the menu for my Thanksgiving this year, too! Thanks for watching and for the great idea 😊

I run cold water, too, as I drain boiling water in the sink - always have. Guess we were just taught to do it that way.

I didn’t get around to watching this until this early evening. Love the recipes! The main reason I was told to run cold water when you’re draining hot water off of pasta, boiled potatoes, etc……is that the cold water running will keep the steam from the hot water coming back on your hand/arm so that you won’t get a nasty burn. Did you talk Patrick into trying that tomato pie? 😁. I have never had that.

@InTheKitchenWithMommaMel I run boiling water down my kitchen drains once a week in the summer to keep those tiny fruit fly things down. I boil a small pot of water divided in half for each drain, then I put vinegar and baking soda down. I haven't had any of those creepy flying critters.

Oh my gracious, this chicken Primavera casserole looks delicious. I need recipes for the summer. However, we're so hot over here, and we can't use our oven. I think I could do stove top on that, but it won't be the same as it would in the oven. I'm going to have to try it both ways it sounds so good. I know you mentioned that pinto beans alongside this dish would be great. So would a nice fresh salad. It would pair well with this pasta casserole. There's something I have missed for the last 2 years. That would be fresh Garden tomatoes. My brother passed away but he had a good green thumb. We're horrible at it and don't get tomatoes. You're in a wonderful area where you get fresh tomatoes. I can't wait to make this tomato pie. I've been wanting to make one for years and yours looks absolutely delicious!

I don’t know where you live in east TN but I have family in Jonesborough who have a you pick blueberry farm. They will have peaches at their farmer’s market on Sat. We are always envious of the sweet corn and wonderful tomatoes from that region.

Yassss I love my cream soups and will never stop cooking with them. Oh yeah. Love those Granger Co tomatoes. Grew up in Claiborne Co and remember it would be on the news when it was tomato time lol there is a farm up here that sometimes has Granger tomatoes brought in. I’ve got to try that pie!!
