Looks like you might be in central to southern Florida, as a guess. If so, you picked a good event to try out. Florida is the triathlon training capital of the entire east coast. So many resources (clubs all over that totally welcome people of all abilities, tons of rail-to-trail bike trails, and even really tough hilly areas to ride should you ever get to that level where you are riding more seriously).
If you are planning to do what they call a "Sprint triathlon" (the shortest distance), I would suggest possibly holding off until you can do a 16mph average on the bicycle with a once a week long ride of 20 miles. The bike seems to be the toughest event for you. While sprint triathlons tend to have people of all ages (lots of small kids and senior citizens) and abilities, you do have to set realistic minimum goals. An 8mph pace might lead to a bit of an upsetting experience when you are faced with 8 to 10 year old first time competitors often doing at least 14mph. You might want to check and double-check whether they will let you use that e-bike. That is often a no-no even in explicit beginner events. Might need an entry level aluminum road bike should you decide to pursue this.
