    My mum shows me her amazing recipe and techniques for cooking the best DRIED PRAWN SAMBAL (虾米香 Hae Bee Hiam).
    Auntie Ah Choon is a self taught chef who for about 20+ years ran a successful Economy Rice Restaurant, Restoran Jia Ling in Skudai, Johor. With no real formal training in the culinary arts, everything she knows about cooking comes from a life time of pure experience, observation and self improvement. She has spent time a great portion of her life cooking in both Singapore and Johor Bahru, Malaysia. Ask any of her former customers, they'll happily testify just how amazing her food is and how efficient she is when it comes to being in the kitchen.

    Thank you for sharing the recipe. The preparation of the dried shrimp is crucial but was not shared. The duration needed to soak and the drying process before grinding the shrimp make a lot of difference. It was great to have this special program. Thank you very much.

    Very memorable, as my late mum used to cook this chilli sambal prawns for us to eat with rice or wrap into bread to eat, super delicious during those olden days.

      新鲜的,只是辣椒而已。搅了后只需要用一茶匙。剩下的可以用来煮别的东西。😊

    The 虾米when you use grind it wont be nice cos when u eat cant feel the chewiness of the 虾米。 I prefer my mum's style she pound the 虾米 but not too over so you can still see parts of the 虾米.

      Yes, the texture of the 虾米 is a personal preference. So if u prefer it to be more chewy, then pounding it will work better as well. 😊
