Cream of tartar or tartaric acid is an organic compound which has a molecular structure very similar to the structure of malic acid, the acid which is present in apples giving them their flavour. Due to their very similar structures the body can’t really distinguish a difference in flavour between them.
Apples for a long time were often thought of as mostly flavorless and used more for cider than being eaten raw like people do now.
