    I have always baked my pumpkins. I love eating them with just butter and salt and pepper, but I also use them for my pumpkin bread.

    Pumpkin pancakes, pumpkin french toast, pumpkin oat muffins, pumpkin pasta.... lol, the list goes on.

    Back in the 1940s. 1950s and early 1960s people did about the same way except they used a potato masher to make pumpkin for pies. Mom cooked the pumpkins or squash and then the kids were tasked with mashing. Yes, sometimes squash was used with pumpkin seasoning to make pies. Great Fun for the kids and necessary for the adults as people were attempting to survive war and post war rationing and shortages.

    I puree pumpkin every year, but I boil it. It's just easier for me. (I tried roasting it one time, and it didn't feel as easy for me.) I freeze the pureed pumpkin in bags with two cups of pumpkin in each bag, and make pumpkin cake (Paula Deen), pumpkin pie, and pumpkin soup throughout the year. Love it! (I started doing this as a new mom, too! I have a picture of my son eating fresh pureed pumpkin from a huge bowl! He loved it!)

    The only thing I ever used my old juicer for was making pureed pumpkin. I'd take any pumpkin, cut it up and run it through the juicer. Toss (almost all of) the water and save the pulp. Heat it on the stove for a bit until any bigger bits soften, add my "pie" ingredients and bake as normal.
    If you taste your filling as you make it, it's easy to know if you need more sugar, spice, liquid, etc.

    As kids living on the farm my parents steamed the pumpkin with cinnamon sugar ..when done served with some milk in a bowl . very simple but delicious 😋

    I think it's because canned pumpkin isn't pumpkin. It's made from other gourd-type veggies.

    Avoid the foil paper when you can.
