- Nicole makes an easy copycat recipe for Costco’s iconic chicken bake. Filled with juicy chicken, smokey bacon, and melted cheese, this oven-baked stuffed pizza crust tastes even better than what you get with a Costco membership!
Costco’s Chicken Bake - 0:00
Cooking the Chicken - 0:58
Easy Pizza Dough - 2:34
Baking the Chicken Bake - 4:00
Nicole’s Costco Chicken Bake - 6:00
Let pizza dough rest at room temperature about an hour before using. Preheat oven to 350. Season chicken with salt, pepper and garlic powder.
Heat a large skillet over medium-high heat. Add oil. Place chicken breast in skillet, seasoned side down and cook, undisturbed, until golden brown, about 5 minutes. Flip and cook one more minute.
Add just enough water to fill the bottom of the pan and remove pan from heat. Place pan in oven and cook until internal temperature reaches 165, about 17-20 minutes. Remove from heat and let stand until cool enough to handle. Chop chicken and set aside. Increase oven temperature to 400.
Sprinkle flour on to a large work surface. Divide pizza dough into 3 portions. Roll each portion into a large circle about 12-13 inches wide. Spread dressing evenly over dough circles leaving a 1 inch border. Sprinkle 2 tablespoons parmesan cheese over dressing. Reserve 2 tablespoons shredded italian cheese blend and set aside. Top dough circles evenly with chicken, bacon, green onions and remaining Italian cheese blend. Fold outer left and right sides slightly over the filling. Roll the bottom of the dough circle over the filling and then roll towards the top edge until fully wrapped. Pinch edges to seal and use hands to work into a long long shape about 12 inches long. Place filled dough, seam side down, on a parchment lined baking sheet.
Brush beaten egg over tops of dough and sprinkle evenly with cheese blend. Sprinkle each with 1 tablespoon shredded parmesan cheese. Bake until golden brown, about 20 minutes.

Nicole's Recipe:

I started making these at home about 5 years ago. I use Italian feather bread dough. Divide x 3. These will be LARGE. After baking and cooling I cut them in half, wrap in parchment, bag and toss in the freezer. Straight out of the freezer into the toaster oven on a piece of non stick foil for 20-25 @ 350.
Instead of the egg wash I baste on more Caesar dressing then the cheese.
I also started making other versions. Homemade hot pockets?
Toss cooked chicken and artichokes with Greek dressing and add feta to the cheese mix. I use Munster, Provolone, Havarti , whatever I have. Add in some olives and green onions.
Another version is chicken, ham and swiss with broccoli and creamy Italian dressing. Possibilities are endless. One of these days I'm gonna try meatballs and sauce.
Those sound delicious!!❤
Thank you for sharing all these delicious recipes!! I will definitely be trying to make some of them! ❤
Do you have any videos on RUclips?
Definitely going to try this and add spinach to it.
Don’t forget to cook it before you add it. I don’t know how many times I’ve had a soggy Stromboli because a restaurant filled it with uncooked veg. Spinach sounds like a great addition to this!
I always thought mushrooms would be great in this
Perfect! The only change I would make would be to use the Costco rotisserie chicken. Easier and more flavorful (and probably what they use).
Any rotisserie will work
That's actually not bad of an idea!
I would use Alfredo sauce
I adore Costco chicken bake. So does my son. He’s 21 now, but probably for the last 6-7 years, any time I go to Costco, he asks me to get him one, and that’s been his birthday lunch request every year too. :)
Also, it definitely looks nicer from my Costco than the one you showed in your video.
I would make my own pizza dough. I do all the time. It's really not difficult. This recipe looks good. I think I'll give it a try.
My local, favorite pizza place will sell me just a ball of dough lol it’s $6 but well worth the small expense when I want a “homemade” dough flavor without actually doing it. Although when I have time I actually LOVE making fresh breads. Sweet or savory. All kinds. Nothing beats it.
It took me 48 years to finally learn how to cook chicken so it's not all dried out. Brown on top of stove med high heat then put in 350 oven until finished
Instead of water, I'd probably use chicken stock
Or wine! Yes!
Maybe the best lesson learned here!!
I almost always brine my chicken. It adds so much flavour and it’s almost impossible to dry it out. I also brine pork.
And cook it to 150, not 165! Internal temp of 150 for 3 minutes and it's just as safe as 165, without drying out.
Looks so good...and the possibilities what to add what to change....would be a great Chicken Pot-Pie roll too!
You know it's really good when she is dancing after that first bite. I have to try making this!
That looks so much better than the Costco dough bomb version.
This video reminds me of why I never put anything in the oven without a timer. I know I will forget otherwise!
That said, this is definitely a copycat recipe worth trying. Thanks for sharing it with us!
I would add bell pepper red onion Colby jack with chipotle ranch dressing, I use store bought dough pillsbury or Rhodes frozen bread dough roll it out , I have made a pizza version also.
Lost without my kitchen timer
Thank you for this recipe!!! My son had one of these at Costco and loved it. Next time he visits I will make one for him. Your the bomb digity!
Thank you 😊
Yum. I think this would be excellent to place the fixins of Philadelphia cheesesteak too!
I’m excited over this video I’ve been wanting a chicken bake and now I can make my own. Thank you so much for sharing this recipe. You made my day. Yours look delicious and full of goodness.
Always enjoy your delicate recipes, demonstrations, and enthusiasm! You’re the best!
I'd use creamy Italian dressing
Same! Great idea! Thanks.
I agree 👍
Costco version definitely has some type of sauce inside
Definitely make this look good and crunchy at same time thank you for sharing with us.
Your videos make my heart smile. Thank you

Yum...Your version sounds and looks delicious. Thanks for the recipe!
Hi Nicole. This is Shirley from Calgary Alberta. YOU are my absolute favorite. I adore all your recipes.❤
Thank you I’ve never had one but always wondered what they were made of.
Wow! This is going on my weekly dinner list girl! So excited!
Beautiful!! as always! Thank you!
This would be great for my hubby to take to work for lunch! Love this.
I am definitely giving this a try! You could do so many different things with the fillings. I also think it would do well camping. Make ahead, wrap in foil, heat over the fire.
This looks absolutely delicious!
Great meal prep idea- super customizable! And I think it would freeze well if made in bulk! Thanks ❤
Your version looks amazing! Great job!
Looks delicious 😋 definitely trying this one!
Your version looks scrumptious!❤
Made this 2x already. Second time I added mushrooms. Amazing, thank you for sharing
Can we talk about how cute her nails are.
This looks fab! Will have to try! xx

That looks so delicious 😋
Nailed it!
Awesome I’ll definitely be giving this a try 👍
Can't wait to try this one!!!
Looks really yummy! ⭐
Awesome! I love this. It's better than Coast Co. Thank You for sharing this with us.👍💚 I can't wait to try this. ❤
I love everything you make. ❤❤😮
Looks delicious... good job!
never heard of these but I want to try it at home soon.
Love your videos❤
I never had a Costco Chicken Bake before and I can see yours is WAY better!
Guess you don't think before you comment.... Sheer stupidity
Yummy,thanks
I have never had the chicken bake. But Nicole you nailed it.....
Really? how do you know? ( I agree 100% but, seriously who gives a Taste Test without tasting?)
@The_Timinator The same people who leave 5 star reviews on recipes and write "can't wait to try this" lol.
Did you even think before you commented😂😂😂😂😂
This looks awesome
Basil would be excellent in this!
Looks !one an amazing hot pocket!
My favorite costo treat!
I’m making this one!!!!
Delicious😊
If you actually let it sit out at room temperature for at least 3 or 4 hours that would be better. The dough will be easier to work with. Also if you use cornmeal instead of flour it's easier to roll out. Believe me I work at a pizza shop. I would use a garlic butter maybe add some basil finely chopped or the paste in the butter. Then put that over the crust when you go to put it in. But those sound delicious! I'm going to see if I can remember how to do this and see if my coworkers would like to try to do this as well. Those sound amazing!!❤
Her sample chicken bake is amazing looking. Cuz the ones I usually get from costco have so much breading on the side.
I am pretty sure costco uses a processed chicken or canned chicken that is why its mushy. Yours looks like a masterpiece compared to a finger painting!
Brag all you want! I'll be using the leftover rotisserie chicken 1st time, but good to learn the restaurant chicken method.
I've never had a chicken bake.... I'm a devout Polish sausage until they took it away and then nothing beats the regular hot dog - with allllll the fixings. Haven't had that in years, either.
Your redo of the cb looked tasty. Well done, Nicole🌻
@nikip9161 I had the chicken bake once and wasn't impressed, so I've never had it again (too many carbs). These days I, too, stick to the hotdog with all the fixings. However, my personal favorite - which CostCo ceased making - was the BBQ sandwich with cole slaw on top. Now that was delicious!
Hey Nicole happy Tuesday love u so much ur videos r amazing and ur a great cook that chicken bake looks delicious 😋 and yummy enjoy ur day and have an amazing summer stay cool 😎 it’s hot 🥵
My son will only eat the chicken bakes at costco. He says the ones they sell for home are not good. So I'll try this
These look yummy! I think these are what the frozen Stouffer's Bistro are trying to be!
Yum!
Look delicious
It's only the frozen aisle version that has the green onion, the cheese blend may also be different. I've seen a video of the last part of the process, they brush the top of the chicken bake with caeser dressing, and then roll it in the parmesean cheese and bake. The video in question says the rest came frozen and they didn't make it in store, but indicated it was because of pandemic, not sure if other stores make them fresh or if its a new change either.
perfect
Thanks so much. I will definitely try the recipe. It doesn’t look that bad. I’ll make the piece of dough and start with your recipe. It was good better than Costco last time. I ate one was maybe three years ago and it didn’t seem like anything. I told my husband, what the hell did they do? They didn’t put any seasoning inside. It didn’t taste like much before it was good. I didn’t like it last time I went. I am gonna try my best to do this one. I’ll let you know. Thanks God bless.❤😊
The chicken bake at Costco used to be huge 15 years ago when my wife introduced me to it. Then shrinkflation happened. It's about 30% smaller with hardly any filling anymore, a lot of air.
Nicole your chicken wrap . looks a lot better . I have never ate a chicken wrap . I guess I need to try making some . Thanks for sharing .
I would use chicken thighs and Romano cheese on the inside , try it with mushrooms .and maybe try some with ricotta cheese inside too ? fyi take canned mushroom and put in fry pan on low heat till they brown to remove moisture and increase the flavor!!!
U are a cool cook 👍
😋 yummy
What kinda pizza crust did you use? Looks delicious!
I wonder if you can freeze it after baking and reheat it.
❤
great sentiment ... but if I'm going to CostCo anyway, why not pick up a few Chicken Bakes on the way out ... I usually grab 3 or 4 wrap them in foil when I get home, then about 8 min in the Air Fryer and I've got lunch for a few days and dont have to do any dishes!!!
I would add buffalo wing sauce! 👍🏼
CHALLENGE! Can you make a breakfast version?
I would add mushrooms for a little extra flavor :)
she fire
I found that exact bread in the bakery bread at Walmarts bakery
I’m not sure that I’ve ever had one at Costco. But I think what I can copycat from this recipe is Sbarro’s chicken roll. Remember Sbarro’s in the mall?! 😍 We had an open campus in HS, we’d walk across to the mall, and I’d get their chicken roll for lunch. This was circa ‘90-‘93. They had a tangy chicken and cheese maybe they did have onion or mushroom in them too. Idk. But they were so good and they were braided or cut like a streusel. Crispy and a side of their marinara. ❤ I just looked it up and now they’re called Stromboli, but back then it was a chicken roll.
I'm surprised so many people like the costco chicken bake. I know her recipe is better.
Did you buy the box powder pizza dough and then make it? Or are you able to find pre-made pizza dough?
Nicole!! Nicole! I LOVE YA!" I WANNA US TO BFF... bring your skillet. ROFLOL 😇🤩
Bring back the app!
I’m wondering if your not a Caesar dressing, fan or even ranch, any suggestions on what else to use?
You could go BBQ sauce with some red onions and mushrooms maybe.
Or look for a teriyakis type sauce, reduce it down or use a corn starch slurry to thicken it up a bit.
@@pierrechristen7221 Thank! Didn’t even think of that👏🏻👏🏻
Options could be pesto, pizza sauce, or alfredo sauce
We belong to Costco, never saw these, can't wait to make yours.
I've never seen anyone congratulate themselves this much on making a meal.
Well???!! I couldn’t help it 😅
It was deserved!😊🎉
She's cute. Funny. Enjoyable 😊
You don't need a membership to eat at Costco food court.
What size of dough is this for? Is this for a large, medium, or extra large? 12,14,or 16 inch pizza? That's a definitely need to know so we know how much dough we're going to need...
It’s a Hot-Pocket!
👍👍👍 (EXACTLY!!!!!!!!)
But maybe sear that chicken in some of that awesome bacon drippings!
That looks so good but i would of had me some lettuce on the aide to top it and make it an official chicken Caesar oven bake
I use rotisserie chicken when I'm pushed for time.
Where did you buy the pizza dough
Shes legit
