INGREDIENTS:
For the Chicken Souvlaki:
▪2 pounds of boneless, skinless chicken thighs
▪125g (1/2c) olive oil
▪15g (1T) salt
▪30g (5-6 cloves) minced garlic
▪5g (3 tsp) dried oregano
▪5g (1 3/4t) black pepper
▪100g (1/3c) Dijon mustard (preferably Maille or Grey Poupon)
▪Zest of 2 lemons
▪Juice of 1 lemon (approx. 30g or 2T)
▪Skewers (for grilling)
For the Pita Bread:
▪350g (3c) all-purpose flour
▪7g (2t) instant yeast
▪5g (1t) salt
▪8g (2t) sugar
▪15g (1T) olive oil
▪210g (3/4 cup) flavorful yeasty beer, warmed to 86-90°F (30C)
For the Tzatziki Sauce:
▪160g (1 large) english cucumber, grated
▪200g (3/4c) plain Greek yogurt
▪75g (1/3c) mayonnaise
▪1 clove garlic, minced
▪5g (1t) salt
▪5g (2T) chopped fresh dill
▪15-20g lemon juice (approx ½ Lemon)
For the Tomato-Onion Relish:
▪120g (2 medium) tomatoes, diced
▪60g (½) red onion, finely diced
▪20g (1/3 cup) chopped parsley
INSTRUCTIONS
1. If using wood skewers, soak for a few hours before grilling.
2. Cut the chicken thighs into roughly 1-inch pieces.
3. To the chicken, add olive oil, salt, garlic, oregano, black pepper, Dijon, lemon zest and juice. Mix well & refrigerate to marinate for at least 30 minutes, up to 24 hours.
4. Make the Pita Dough while chicken marinates. In a food processor, combine flour, yeast, salt, sugar, and olive oil. Pulse 5 times to mix. With the processor running, slowly add the warmed beer until the dough forms. It will be shaggy.
5. Turn the dough out onto a lightly floured surface and knead for about 2 minutes, until it becomes slightly elastic.
6. Cut the dough into 4 equal pieces (about 150g each). Shape each into a ball, cover with a damp paper towel, and let rest at room temp for 15 minutes.
7. To prepare the Tzatziki Sauce, grate the cucumber and squeeze out excess water. In a mixing bowl, combine the grated cucumber, yogurt, mayo, garlic, salt, dill, and lemon juice. Stir until well mixed.
8. Roll Out the Pita Dough: Lightly flour a surface and roll out each ball of dough to about 8”/20cm in diameter.
9 Grill the Pita and Chicken: Preheat the grill to 550°F/285C. Skewer the marinated chicken and grill alongside the pita bread. Grill pitas for about 2 minutes per side. Grill chicken skewers for about 12-15 minutes, turning occasionally until well charred on all sides.
10. Assemble the Souvlaki Wrap: Remove chicken from skewers and chop into smaller pieces. Place chicken in a pita, top with tzatziki sauce, tomato-onion relish, and pepperoncini.

Protip about the tzatziki sauce: Even after you've squeezed dry your cucumbers, spread them out on a plate as thin as you possibly can and salt them. Let the salt continue to draw out the moisture for about 20-30 minutes, then towel off the salt and osmosed water. You'll know you've done it right when the cucumber turns a super bright green color. I learned this tip from Chef John and the completed sauce is always so much better.

Or just scoop out like 50% of the seeds before grating the cucumber

Why
As a half Greek, I'm confused by the addition of beer into the pita mix. As a half German, I'm confused about my Greek side.
I think since its a fast dough recipe, the beer is to account for the yeasty flavor it is not getting since it doesn't have a fermentation period.
But if there is no fermentation period, than why bother adding the yeast anyway?
@@hansvanlennep6376 So the dough rises when cooked, if there's no yeast the pita would be significantly less fluffy and soft. You'd end up with a pita that's more like a flour tortilla than a pita.
@@hansvanlennep6376 You could use something like baking soda instead of yeast, but yeah like the other commenter said, you'd be making tortillas instead of a pita like bread.

One tip I got from Americas Test Kitchen. Make some extra marinade (that doesn't touch raw chicken). Then toss the chicken in it AFTER you grill it. The post-cook marinade actually penetrates the meat much more than pre-cook. It really amps up the flavor.
My wife (who is Greek) gets a bowl and puts in lemon juice, olive oil and some oregano. After grilling, remove the meat from the sticks and toss the meat in it. Really amps up the flavour.
I do the same thing, it is known as a hot marinade in our kitchen. nothing better than chicken wings cooked to half way on the gas grill then tossed in a bowl hot with Franks and butter, then back onto the grill to "set" the sauce.

@@TheMalMeninga I knew a Greek guy once who would baste his steaks with a half a lemon stuck on a fork and dipped in olive oil, lemon juice, and good quality dried oregano... I do it to this day, it's amazing.

The foley on this channel is one of the things that really sets it apart.
As a greek person..if you want to take tzatziki to a next level, salt the grated cucumber which draws water out of it and squeeze in tea towel..then use thick pot set greek yogurt and squeeze any excess liquid using cheese cloth..then add tablespoon of white wine vinegar together with crush garlic salt white pepper and chopped dill..it will really lift flavour .
I have a question, isn't a pita a filling bread and this one more like gyros?

@donaunsworth5620 you will be blown away when you see how many varieties of Greek yogurt exist in greece..you must use thick pot set greek yogurt..all the other stuff called greek style yoghurt is too watery. Tzatziki should coat your spoon and stay there for really good Tzatziki texture.

Absolutely. My family loves this style of food and my 6 year old will gobble it up. Brian has several Med dishes on the channel that have helped out and I'd love to see more.
LOVE this. I really appreciate that all of these ingredients are part of a normal kitchen pantry/shop so you don't have to go out and buy new ingredients to use only once or twice. Would love even more Mediterranean and/or Middle Eastern food on the channel.
Protip if you place your yogurt over a small colander with a coffee filter and leave it a for a few hours you get a really creamy yogurt thats not watery. Try making tzatziki with it (and using EVOO instead of mayo), it's great.
Excellent as usual. I make these once a week for my family, except I cheat. Trader Joe's Middle Eastern flatbreads and TJ's tzaziki, though I also make homemade hummus (1 can garbanzo beans, half drained; 3 cloves of garlic; 2 big tablespoons of tahini (also TJ's); zest and juice of a lemon; S and P; olive oil in food processor to preferred texture, as well as maybe cilantro, or parsley, or whatever flavor agent like sun dried tomaotoes, to die for).
I love souvlaki. It's one of the best things ever.

For sure , but if you have good quality yogurt , you don't need the mayo for the tzatziki. Everything else look super delicious!

I made this tonight, and all I can say is "Let's eat this thing!" So much flavor in the chicken, and the tzatziki sauce is THE BOMB!! I get the addition of mayo to the tzatziki in your case, just noting that here in Greece you can get very low moisture yogurt that I think isn't as widely available elsewhere. That's what most people use and the result seriously thick, no mayo needed. For fattines, high fat yogurt + olive oil do the trick.

Simplest tzatziki is yoghurt, cucumbers, and garlic. A lot of people add dill which I like and one of my aunts put fresh mint which was okay but dill is better. But tzatziki is one of those things in Greece that every household is gonna do a little different

@@paid22b I’ve never seen tzatziki with feta, but hey if that’s what you want try it out bud. Don’t let these purists make you not want to try something potentially delicious.
@@steliosmaris we need more people with this mindset. I used fermented garlic scapes instead of fresh cloves because I had them and the funky flavor is a nice addition, so I think feta could work very well if it's what you want
These grilling videos are killing me. I can't grill in my apartment, and I know I could just throw it in my oven or air fryer, but these grill vids make me miss and crave BBQ soooooooo much. 😭

Hey Bri, I just wanted to say thanks for this one. I don't have a grill, but I made this using a roasting rack under my broiler and it did not disappoint. I'm gonna grill some more up properly next week with my parents.
Cooked this last night. I've been sick so I didn't do the skewers and just grilled the thighs. I needed to treat myself to something amazing and had all the ingredients for the marinade and tzatziki. Wonderful flavor and amazing meal. Thanks for meeting the Mediterranean demand!
I saw someone use a potato ricer to get moisture out of foods such as cucumber, totally recommend it!

I just made this for my bestie. OMG it was amazing. I was a bit concerned with all that mustard but it did not overpower the flavors at all. That tzatziki is the best I have ever had. I made GF naan as she has Celiac. She loved all of it. I will be adding this to my rotation!
