    If I had a KitchenAid mixer, then I would make pasta all the time. Thanks Nicole for showing how easy it is to make homemade pasta! Yummy!

      I have a KitchenAid and I use a hand crank pasta maker, working with power tools can be a bit overwhelming, the hand crank NEVER goes too fast, you can stop cranking and pull out the dough that came out and lay it out nice and flat and then start cranking again when you're ready. Personally, I only make Pasta to make Ravioli, I've made Linguine and Spaghetti with my hand pasta maker and I've found that the Fresh pasta is pretty fragile while cooking and we never thought there was any taste difference, so it's easy to buy the dried, it's the sauce and other ingredients that gives you your flavor anyway. 😊

    Any recommendations for drying the pasta for use later? Say within the next couple of weeks? Thinking camping. Or would freezing or refrigerating be better options?

    How do you make pasta without egg? My Grandson has a potential fatal egg allergy. Also is it possible to make pasta using other flours like almond flour, chickpea flour, etc. ??????

    The real trick and the sign of a great chef I think is someone who can take these gluten recipes and make them gluten-free. If the goal is to activate the gluten in this dough what do we shoot for in gluten-free flour? Or is it a hopeless cause?

    Nicole I wish you lived next door to me. I would wash your dishes and clean the kitchen for a lunch or dinner. Oh and I will bring the wine. That looks delicious.
    I have the Kitchenaid and the attachment. Now I can see my mistake. It was not dry enough to cut.
    But I still want to sit and watch you.

    Ah yes, the pasta roller, great invention but...... you really should try hand rolling. It is an upper arm and shoulder workout not to be rivaled.... no more flabby underarms.... perhaps burning a few calories to make up for eating all that wonderful pasta.
