A year ago this pie was over almost at the moment of serving. pastry: butter 150 g flour 300 g pinch of salt icing sugar 50 g zest of 1 orange 1 egg (free range) filling: cooked pumpkin 400g sugar 175 g double cream 100 ml vanilla 3 tsp cinnamon powder 3/4 tsp ground ginger 1/2 tsp allspice 1/4 tsp nutmeg 20 gratings 3 eggs, whites and yolks separated pinch of salt for whisking the whites 180C, 45 minutes.
Bar none, hands down , one of the best pumpkin pies EVER. I'm Canadian, and yes always used the tins , but NOT this time. I did this pie just like you see here, I didn't wait and cool the crust dough. Never going back to tins , well unless I have too, but roasting anything just brings out the flavor. Been following Jamie since day one, being a home cook and love to create in the kitchen , I seem to always go back to Jamie's recipes or versions of them , they are simply delicious , not overworked. Brilliant . Keep teaching :)🙂 **One amendment, I grind down my own chai spice combo ( cinnamon, ginger cloves allspice cardamom and pepper) I am a tea company owner and always have larger quantities of this spice combo at hand. I used two teaspoons , plus the ground nutmeg to replace to spice combo's Jamie used. Cutting into the pie the crust is perfection ( with no resting) no soggy bottoms, golden brown and a crust which is a joy to eat!! Just a lovely combo......
I love Jamie's recipes, they always stand out, and have that little touch... Also I love your combo, I put similar comb in Masala tea with milk and its the most wonderful tea I ever tried...
The flavors remind me of my mom's pumpkin pie: she always did a decorative ring on the outer perimeter of the pie made of brown sugar, butter, chopped pecans, and orange zest, put on the pie near the end of the bake -- just enough time for the butter and sugar to meld into something like a caramel (I think the recipe came from some magazine in the 1960's -- perhaps Better Homes and Gardens). I always thought that was the best part. I may try making this with Robin's Koginut squash (a recent hybrid, bred for superior taste). And thank you for what looks like an easy crust (always the most daunting part of a pie or tart).

I think he did it more to keep in the stationary camera frame. Notice the camera does not move. But its more than fine to sit & prep food. I do it more & more often as I age. Tedious tasks like peeling & destemming things are easier, imo.
not so good sitting down as yr body is restricted in how it can move .And yes I'm aware of body pain I have a back,neck,arm injuries. Better to stand & use yr body to move more easily

Love the simplicity of your recipes, either using a food processor, a blender, or just using your fingers for a pie crust. That pie looks delicious. Love your rustic man cave kitchen, the wood oven, and you're sitting at the table with everything handy to make while sitting down. 🏆👏 My kind of cooking/baking.

Tried this with butternut squash and it turned out utterly delicious💫 Though we covered it with aluminum foil halfway through because the top was close to getting burned and we didn’t put it on the bottom of the oven, the bottom crust turned out perfect anyways We made this recipe two times within a week! Thank you Mr. Jamie for sharing this recipe with us❤

Dear Jamie, love pumpkin pie (I'm Canadian). I once was in Atlanta US at a dinner with friends and asked for some Pecan Pie. The lady next to me leaned over and said Hon, a pee can is something you put under your bed, what you want is Puh-khan pie. 😂
In my work travels through Georgia I called on a client whose shop and office were in the middle a pecan orchard...his other business. I asked him is it pronounced "pee-can", or "puh-khan". They all laughed and said "when we're raking them off the ground it is "pee-can", when we're selling them to tourists we say "puh-khan".
I like the atmosphere in this video! Pumpkin Pie is really delicious, I have made it once only following a different recipe, but I will definitely try this one out too!

Just made this today OH MY LORD im happy i did this is autumn in a pie pastry was on point and the batter light and fluffy a perfectly balanced pie great with a coffee. I did put it on the middle shelf in a tin 180° 45mins will definatly make this again. Great recipe 👍

I tried pumpkin pie (as an Australian) as a dessert on a roadtrip in the US a few years ago. It was sweet, but not overly so, and it had a pumpkin-gingerbread kind of taste. It was pretty darn good.

I’ve never cooked a pumpkin whole like that in the US. I usually take a pie pumpkin, cut it in half, scoop out the seeds and stringy bits (save the seeds to roast later), and then bake the pumpkin upside down on a baking sheet in the oven.
I think he did it whole because he has a pizza oven and doesn't mine the longer cooking time. I also always cut and clean before roasting in the oven. It's faster, dries it out a bit (that's good thing) and adds a caramelized flavor.

It's 10 months later, and it's again getting to be that Merry time of year 2024! Fun learning your 'cheffy' version of an American classic it looks delicious! Candied pecan's yum! I'm American I love to use fresh pumpkin, I don't add whipped egg whites to mine.
I only half blind cook my pumpkin pie crust. I will try your method as it looks interesting. cooking pumpkin whole is worth the try as steaming it is such a pain. As a Canadian I always have maple syrup (always #3) on hand. The crust is made in a very similar fashion to how my sister made pie crusts from whole wheat flour. I have been making flaky pie crust for years but I would like to give your method a try.

Oh my Gosh the most delicious pie of my whole life thanks dear Jamie, you are the best chef ever ever ever eveeeeeeer! It was like a sweet mouse in a pie my Gosh and it had a bit of juicr oh God , Taste like heaven !! Perfect
DO NOT COOK ON THE BOTTOM OF THE OVEN! I went through all the steps for this pie. The batter tasted amazing but the pie crust was BURNED UP with 10 min to go at 350F. Put this on a RACK! I used a Wolf electric professional oven. Have to start over and recook before Thanksgiving guests arrive! It takes about 4 hours from the start of cooking the pumpkin.

Long hours of standing kills my legs going up to my lower waistline so I do sit at times to rest my lower back waistline and legs

It was like a sweet mouse in a pie my Gosh and it had a bit of juicr oh God , Taste like heaven !! Perfect
DO NOT COOK ON THE BOTTOM OF THE OVEN! I went through all the steps for this pie. The batter tasted amazing but the pie crust was BURNED UP with 10 min to go at 350F. Put this on a RACK! I used a Wolf electric professional oven. Have to start over and recook before Thanksgiving guests arrive! It takes about 4 hours from the start of cooking the pumpkin.
Y'know, I think he meant the bottom rack of the oven, not the actual bottom of the oven.
After he said that. I was like, “you’re wrong buddy.” Burnt pies for viewers who follow his instructions. 😂
