When I served in the army, one of my duties was to make bread. I remember the lieutenant responsible on this post, he really knew his craft. It also used to be around this time of year and we had ripe tomatoes. I can assure you there's nothing like fresh bread, feta cheese, tomato, oregano and olive oil
How about smoked chicken? It's delicious on hot bread.

@@undokat Smoked chicken is fine, yet my initial go-to is what I mentioned, it also brings memories apart from the army, my grandmother used to make bread in the wood oven back in the village.

How come whenever I follow recipes on youtube my dough is always so much dryer? It never has that nice silky smooth texture. Almost as if I dont use enough water even though I follow the recipe
Hi,
I can think of several reasons. If you live in a dry and hot area, you might need to adjust the water to flour ratio. Jamie lives in the UK which is rainy and gray.
Also people tend to underestimate the amount of kneading it takes to form gluten and have a nice smooth, supple dough. Next time try kneading the dough for at least 15 minutes. If you have trouble kneading or pain, use a standmixer or a relative with strong hands.
It depends on the type of the flour, maybe it need more water , you can add more .
whatever you do, do not throw bagel at strangers
I've been watching Jamie since he entered the airwaves. So glad the vibe is much more calm and I really enjoy his manner of instruction. My dough is resting for 90 minutes and hoping for a long-awaited baking success :).

Unfortunately the consistency of the bagel inside does not match what you can get in New York City

@@radar4536 It refers to a style of bagel as opposed to Montreal style. And these aren't even NY bagels anyway. First, no diastatic barley malt. Second, no cold proof. Third, no liquid malt in the boiling water. Fourth, sheet tray makes one side flat whereas a real bagel is cooked on a wet board to prevent that.
Just a note to myself:
750g flour
450ml water (luke worm)
7g yeast
3 tea spoons of sugar
3 level tea spoons of salt
10 min of kneeding
12 beagles
Rest about 1.5 hours
Bicarbonate of soda boil for 2 min
200 celesus around 25 min
Those sunflower seeds are pumpkin seeds.
Wow! I never thought that I could make my own bagel until now--hahaha. That was truly pretty simple and I am sure WAY cheaper than actually buying a dozen bagels at a bakery/store. Thanks for the lesson, Jamie!

Hi,
You can use a sour dough starter and omit the sugar. Sugar merely helps with rise and adds flavor. You may also use honey, molasses or barley malt syrup if you’re an OG. Have fun!

Hi,
adding the seeds before might hinder the gluten from forming. I would add the seeds after the first rise and be careful not to add too many seeds or big ones. Poppy seeds I have used and they turned out fine.
What is strong flour? Wheat or bread flour?

Jamie lives the UK, so I am guessing he wanted to use a general term for flour with a high protein content. If you are in the US, I would suggest using bread flour. It is stronger and will make for a chewier bagel.
Some cooks post links to their recipes in the descriptions...so thoughtful.
Be careful don t throw bagel at strangers scientists and peoples cuz there s a chance someone will be a multiversal threat

I converted your measurements to US 6-1/4 CUPS FLOUR, 1.9 CUPS WATER, 7 grams yeast, 3 tsp sugar, 3 tsp salt.... dough seems a bit hard to knead, but I kneaded for 15 minutes.... I'll let you know if it rises. fingers crossed.... followup: they turned out GREAT! I think next time I will use a bit more water or a little less flour because the dough was still not sticky and the bagels not smooth, but they taste great
I've had to rewatch this so many times because I keep losing track after the emphasis on how wonderful thumbing is....
Still gunna try this today and probably wet myself laughing when it comes to a good thumbing.

another new yorker approved here. jamie, these bagels are simple and fun and positively brilliant. i added barley malt syrup to the water for added depth and browning. halved the recipe. i loved working with the well right on my counter. thank you!
I make bagels twice a week for my family. Had a blast experimenting and have tried the barley balt. Also can use brown sugar or honey in the water with a teaspoon of baking soda. I bake at 400 degrees for 17 minutes.

My dough never ends up smooth. It always ends up very sticky and a mess :(

Here is my standard bagel recipe that I use:
500 g Wheat Flour (Bread or AP)
300 g Water
7 g Yeast Powder
10 g Salt
20 g Sugar (Or Honey, Molasses, Barley Malt Syrup if you're an OG)
This makes six big Bagels. Have fun!

I really appreciate the effort and the enthusiasm, but already from the sound and the look of the crust I can see that they are way too crunchy. Bagels won't come out properly without the lye, unfortunately. It's the lye that gives them their particular chewy and glossy soft crust on top.

They look delicious Jamie. I have been baking my own homemade bread now for about 3 years and bagels are on my breakfast table every morning. I don't think I will ever go back to buying bread ever again. I'll be making homemade bread and bagels when I'm 90 years old.....if I get that far, teehee. Lee :)

@@wonderwoman5528 Hi there. No, I don't have a bread maker. I just make my bread by hand or use my mixer with the dough hook attachment to knead my dough. When I make bagels, I chuck it all into my mixer and let it knead for about 7 mins. My ciabatta loaves are made just with a bowl & spatula and time does the rest with me doing a few stretch & fold rotations. I love making my own bread and bagels. I make bagels, ciabatta loaves, sandwich bread, dinner rolls...pretty much anything really, lol. It's been so much better for our health. I've seen a marked difference in both myself & my Hubby. I always thought ciabatta was complicated and never learnt to make a ciabatta roll but now I’m going to try my hand at all kinds of things. I've been making bread myself for quite a few years now, too. It's so therapeutic as he said, but also the flavor and aroma of it, flooding the house. Bagels are actually pretty simple to make. I guess it must be the parboiling and then baking that put people off, but it's so worth it 💖

It depends on the pizza dough. Traditional pizza dough uses 00 Flour, which is a very fine flour used for pasta and pizza. 00 means it has been finely ground. In the US flour is categorized by protein content. EU is a whole other story.
Pizza dough is not enriched with sugar, just flour, salt and yeast with a higher water content. Bagel dough is enriched with sugar or barley malt syurp. If you plan on making bagels in the US, use bread flour as 00 flour is hard to come by. I have used 00 flour for bagels and it was fantastic btw.

Horrendous bagel recipe. If he prefaced that this would be an easy version, sure that's fine, but this is far from how you make a good bagel. From the ingredients, fermentation, shaping, just about every step is really not thought out to give you the best bagel. You can even see at the end how the crust so just so flaccid rather than being alive and crisp.

Jamie, I’ve tried several different recipes - but yours is BY FAR the best! Perfect! (I did use my Kitchen Aid though, as I hate kneading dough).
These are good. Halve the recipe for small families. They go stale quick!

he did. What he meant was a flour high in gluten, or a flour that is used in baking bread in general. If you are in the US, I recommend bread flour. Have fun!

someone baked bread and used a wet tea towel to cover the dough. it ended up flavouring the dough with whatever overly perfumed laundry product he used. so dry towel
