I found that if you soak the kernels in water for 10 minutes, the extra moisture added to the kernels helps produce larger and fluffier popcorn.

When I was about 8 years old, I got a flashlight in a box of Cracker Jacks. It had a chrome steel body with a red lens cap and used one double A battery. At the time I thought it was the greatest thing ever. I used it for several years reading comic books under the covers in my bed and for lighting my way home at night when I was a kid. I still have that flashlight but I haven't tried it out to see if it still works. Thanks for the memories, Kent......and for the Caramel Corn, too :)

If you bake it in oven, on a cookie sheet at about 150° for 45 minutes stirring it every 15 minutes it will distribute the carmel far better and will also get far more crunchy. We make 6 gallon at a time a couple times a year, that tastes like Crunch & Munch which is a lot better than Cracker Jack in our opinion.

i have the best results with peanut oil and with coconut oil.
i pour in a double handful of kernels and tip the cold pot 45 degrees so the kernels are lying in the corner. I pour oil until it's just visible between the topmost layer of kernels. I don't want the oil level above the kernels. I stop when it slows to more than 1 second between pops. Have a container ready to dump the completed popcorn, if it takes you 20 seconds to find it, all the popcorn touching the bottom of the pot will be burned by the time you dump it.
