Vegans seem to think that people don't like thier plant based fake meats because theyre plant based. No its because they taste like crap I dont have to eat them cuz i can eat meat. I love vegetables AND meat.

I grew up in the military overseas. Whenever a unit had a pig roast I would go. They buried the pig and it cooked all day. It was amazing. 😊
I remember being probably 6-7 years old and at a family pig roast. The guy carving the cooked pig asked if I wanted the weiner but told me it was his tail 😂

My father served in the navy. During World War 2. he was on a mine sweeper that went in to Guadalcanal before the invasion sweeping mines. I'm so proud of him and so happy that you recognize the veterans and the contribution they made to this great country.

Here in Cebu Philippines they cook a hog much differently. The hog is speared through with a bamboo pole and it is a human powered rotisserie all day long to cook it over a bed of coals.
My friend went over there on a missionary trip and told me how they cooked it all day, rotisserie style.

Did TWO whole Hog in 2017 One pig 180 and the other 200+ lbs. Used and engine hoist moter for the spit turner fabrication (Low torc, could handle 100's of lbs.) Re-purposed a pit grill. And still the welds broke 3x on the chain drive supports. Biggest take away: having a chain tensioner sprocket. Had to use a piece of scrap lumber.. but it worked!

Can't believe you finally did a whole hog cook. My granddad did this, usually in the late Fall on his backyard brick pit about 2-3 feet off the ground.
A way long time ago when I was kneehigh to a grasshopper in the 60s. But no injected marinade. And no flamethrower. Just a mop with lotsa butter, vinegar, who knows what else, and finished off with some homemade BBQ sauce at the very end of the cook, which lasted most of the night.
It does take awhile but it is worth the wait

@@CowboyKentRollins Totally agree; I fell asleep somewhere around 10 or 11 in the evening, my dad manned the shovel with the oak/hickory coals during the night, then I woke up to some wonderful BBQ the next day. Pig magic happens.
aww thanks for the memory that flooded back, my Great Aunt's 100 birthday/family reunion party. Mom and I got lucky to be invited since we flew from phx to minn and drove to border of s/d/ minn. to celebrate with them. one of her son's and grandson cooked a whole hog and wow was it delicious. thanks for the video.

Mr Rollins, as a Veteran, retired Police Officer, and now a current Volunteer Fire Fighter, I wanted to sincerely thank you for always taking the time to tip your hat and thank us. It is deeply appreciated. Now, a helpful tip that I discovered a couple of years ago while fixing things on our Ranch. Instead of using the time tested bailing wire to tighten up your rack, try using the Metal Cable Ties that I get at Harbor Freight. With the tensioner that is also sold there it would work great and save you a lot of time. I use the heck out of them for a verity of things and they work great. God Bless you, Shannon and all of the pups and have a wonderful Christmas.

Doing it this way is an awful lot of work and takes a lot of fuel.
Getting that temperature just right is tricky and even Kent had to back the heat off.
That injecting is what saved Porky from being too dry. Good job.

At the end of the 1970's I was a Brit RAF pilot on exchange with the USN at a remote base in the Mojave Desert.
I was going to be there for one 4 July event, and as the only Brit I knew of within about 150 miles, I wondered how I could survive the event.
So I did a hog roast (above ground) with several bottles of duty free booze. I think it was well received once I had overcome mention of 1776 and RedCoats and several other less polite comments!!
The biggest problem I had was finding a hog that was still intact. All of the local meat outlets could offer me many different cuts, but all separate. Eventually I found a proper butcher who thought he could find one intact and before it had been marched through a circular saw and wrapped in plastic. He did, and it all seemed to go well.
I survived to return to the UK after 3 years of great fun with the USN in the desert, and the fact that I am still alive today prompts me to suggest that the USN folk decided not to scalp me and put me out to dry!! The duty-free booze might have helped!!
But an above ground hog roast - done properly - is an exceptional way to have a great party and enjoy some good food.

Very excited to watch this one! I love a good whole hog! I had 4 of them at my wedding reception... a bunch of other stuff too but the whole roasted suckling pigs were the highlight by my reckoning. Nothing beats it. Ok... on to the video.
Edit: I remember well that, at that time (early 90's) one of my sisters was a vegetarian. Now we had beaucoup vegetarian choices too but her husband just couldn't say enough good things about that roast pig and she caved.... ate quite a bit of it and, voila, she was rolling her eyes into the back of her head it was so good! Especially the skin... yum, yum, yum!
It was done in the Filipino style because, though my lovely bride was born and raised in Canada, her family hailed from the PI. I'll admit that our wedding reception was a bit of a barrio thing... out of doors with open fire pits and about 200 people and buckets of food and drink.... it was one heckavu good party! Probably way, way, way too much alchohol was consumed, too!
Not to worry, though.... fast forward to today.... we have 9... count 'em 9.... beautiful and successful adult children and, so far, 3 gorgeous wee grandbabies! More to come, God willing! Beautiful memories to be sure.... and looking at this video brings them back.
I've got a serious hankering for some lichon right now! 🤠🤠🤠
Another edit: I really appreciate that Mr. Rollins gives a shout out to veterans. I realize that it's primarily for my American brothers and sisters who served but I served 12 years with the Royal Canadian Navy and it was my honour to serve alongside my American cousins for a little over a year of that time on an inter-service exchange with the USMC (they are Navy, after all, though they do tend to bark a bit when we Navy types point that out).... seriously, though; there are few finer service folk than a US Marine! No finer ally could be wished for.

GREAT VIDEO! We used to do a whole hog roast back when I was a kid. There was a local bakery that would do the brining and cooking for us - we just had to drop off the pig. Man that was such good food from a more simple and wonderful time in my life! Thanks for the memories Kent!

I used to cater for a hobby (ran EMS, rescue, dive team, and fire, too) to UNWIND after dealing with engineers, architects, project managers, etc. at my real job traveling multi state working on industrial and institutional furnaces, boilers,and ventilation
equipment.
We did several hogs at a time, could cook 420 to 450 halves of chicken (sometimes 5 or 6 cooks with 200 pounds of coals at a time) or 60 ribeyes or strips, or 6 beef shoulder clods per pizza oven (4 ovens) Personally cut 900 pounds of potatoes into fries one weekend.
We fed up to 2500 folks at a time.
Lots of work, but very satisfying.
We had a race track on the grounds (Powell Speedway), had hay rides, and made lots of memories.

Hey Kent. Just found your channel, love it. I have many cookers and grills, but one of the things I have never done is cook a whole hog. Video is inspiring, just need to get my boss (wife) to allow me a place on the yard to create that pit. Man did that hog look good.
Most important, watched many of your vids. Thanks so much for recognizing our veterans! They are the true hero’s. I am not a vet, but my dad was 26 years in the army with two tours in Vietnam. Military folks are a special breed, and those who served should be celebrated. Same as our first responders.
Keep up your great videos. Already looking at your breakfast hole sandwich as a dish for one of our tailgate dishes next year. Yeah the season just ended, but we start planning early.

The chiropractor part had me laughing loud. I had no ides you guys in the states ate this. Sadly in Scotland its way too expensive to buy a whole hog. My dad's from Portugal, I have good memories of barbecues in maderia eating leitao assado (roast pig). Those were always special days. The whole family eating together outside in the forests
