Beautiful example of what makes 🇺🇸 great!! Good people, good food, and good history that we can share with our children to continue these traditions!! Love this channel!!
I grew up in S Louisiana. There is a festival every weekend in a small town nearby. But Cochon de Lait Was my 2nd favorite only to Breaux Bridge's Crawfish Festival. I do miss my culture and my people.
We do exactly same thing in Crete Greece But with lamb and all we add to it it’s sea salt and that’s it nothing else It takes 4 hours but 1000000% worth it
Love this series ! Didn't realize how many styles of BQ existed. I can smell the goodness through my tablet. Great time to be a carnivore . Thanks again Doc.
Great series, thanks for sharing. As a life long Florida resident I get the best of both worlds. American Southern BBQ, and the Caribbean styles. Cuba and Jamaica both have delicious whole hog traditions.
Fresh pork, properly prepared and eaten as soon as cooked, unreal. Congrats to the festival on its years of making Louisiana what it is. Been a while, but we played the festival a number of years ago. Randy T. & the Rascals.
Randall Trantham Sorry, but it's against God's LAWS to eat pigs! God's LAWS are still in force and will be until the end of time! No matter what some false prophet (prophet=preacher) may have told you, JESUS plainly stated..."Think NOT that I came to destroy the LAW or the prophets. I came not to destroy but to fulfill. For verily I say unto you, till heaven and earth pass, one jot or one tittle shall in any wise pass from the LAW till all be fulfilled." Matthew 5:17,18 "SIN is transgression of the LAW." I John 3:4 Pigs are filthy animals and were never intended for human consumption, any more than were vultures or rats. Some animals are the garbage men of the animal world and have been declared unfit for the human table! We are never taught God's LAWS in church because the preachers only preach what they were told to preach in seminary, and if they dare to open their mouth and speak the truth, they will be kicked out of their organization tout suite! God made His LAWS for our protection and health, and when we defy them, we receive the curses they ultimately bring...like heart attacks and strokes from eating pork! As one wise prophet wrote many ages ago..."My people are destroyed for lack of knowledge." Hosea 4:6 For Big Truth! kristi
The man that made his own drum for his dressing is a real man. We need men like him who sees a need and can make something to satisfy it with what he has. Hats off to him. A real man. 👍🏾
That's how you do it; no sauce. Folks looked at me as if I offended them when I told them to hold the sauce and Cole slaw in the Carolinas. I want to taste the pork, not dried up meat masked in sauce. Much respect to this style of cooking.
I'm from North Carolina around the Charlotte area I was in Louisiana for 3 weeks and so many towns and places and people I was shocked to see that people have no sense of color down there everybody treats everybody with equal respect I was astonished to see it so deep in the South being from the south myself these are wonderful people
eric haggerty You won’t hear about it because it doesn’t fit the Liberal Leftist narrative of racism and hatred in the South. If the race hustlers got real jobs we’d all be better off. Around here, we got respect for any man who works hard and takes care of his family.
Not to mention that but the ingenuity of the people xD every Cajun I have come across has a boiler or cooking set up liek the propane tank guy. That’s some riggin’ for sure xD
I was in Louisana in 01/02 & I loved it! The people were nice & friendly, & always greeted you with respect! I'm not saying that racism doesn't exist down there, as a black person, I'm well aware that racism isn't always the "in your face" kind. However, I was warmly greeted by both blacks & whites there, I hope it's still the same way because I'd like to visit again someday.
I would like to apologise in advance if one of my countryman would come on this page and say "You should try the Filipino lechon"! (they tend to do that) This looks amazing!!! Makes you want to go visit LA.
We're in northern Canada and this kind of BBQ is something we don't get up here much, until now. I just built myself an enclosed pig roaster now I need lots of videos like this to teach me how to do it right. Thanks for sharing youe videos and dispencing this knoledge. We never learned this in chef schoole or during my apprentice time.
My Nan a Fenland farmers wife use to say "The only part of a pig you can't eat is the 'Oink.' In England we've been eating happy hogs for 1000s of years and they've found the bones in stone age settlements to prove it. I'm glad to see the old Wessex Saddle Back in this process, but the finest eating piggy is the Gloucester Old Spot in my humble opinion. This Cajun hog roast looks delicious. If push came to shove as much as I love my roast beef and cow products if I could only eat one animal for the rest of my life it would be the piggy. It's so versatile, from many fine roasting joints to spare ribs, bacon smoked or not, the best sausages, black/blood pudding, white pudding, Haslett, Brawn, pickled trotters, gammon and fine hams of all descriptions. Crispy pork crackling and scratchings. Kidneys and liver. All hail the Porker! ❤🐷❤🐖😊
In Texas our bbq is mostly beef, went to Tennessee stopped at a bbq restaurant all pork. Not going to mention which is better to avoid any hurt feelings .
I just Love America! Great people, awesome foods, sharing old techniques etc .. let's get back to ENJOYING OUR REAL AMERICAN WAYS ... MAKING FAMILY, FRIENDS, NEIGHBORS IMPORTANT. Making Christmas and Thanksgiving about family and God! She said THOSE were the important family days! I agree! ❤️. Thanks for sharing this video!
i remember in my village ,in my house,in december, we use to slagter pigs ,me and my father, and even friends ...it was so nice,i think it was a great tradition in all europe
You know someone takes their BBQ serious when you can tell they almost take offense when you mention the word "sauce"
Beautiful example of what makes 🇺🇸 great!! Good people, good food, and good history that we can share with our children to continue these traditions!! Love this channel!!

Love it from Dallas my parents and 4 kids at that loaded up station wagon and headed for

I miss America being like this, what a great time, cheers to all of u
it still exists. skip CNN and the hate, drive to the country and respect your fellow man.
Oh please
I grew up in S Louisiana. There is a festival every weekend in a small town nearby. But Cochon de Lait Was my 2nd favorite only to Breaux Bridge's Crawfish Festival. I do miss my culture and my people.
Beautiful part if the country with the people to match
Yeahyouright Rusty Vaughn.. . I'm from around Alexandria and I do miss the festivals and parties. There is a festival somewhere every weekend
Well com'n back now ya here 🤣🤣🤣
I'd love to live somewhere like that!! I miss people being neighbors and Getting along.
Im originally from Cottonport which is only 10 minutes away. I miss going to the festivals and Mardi Gras now that I live in the Pacific Northwest.
We do exactly same thing in Crete Greece
But with lamb and all we add to it it’s sea salt and that’s it nothing else
It takes 4 hours but 1000000% worth it
It's great to see how good food brings all types of people together.
Love this series ! Didn't realize how many styles of BQ existed. I can smell the goodness through my tablet. Great time to be a carnivore . Thanks again Doc.
Glad you like it. More food culture and traditions to come - and a lot more BBQ!
Love that " Great time to be a carnivore " i could smell the pork and crackling through the screen !
NOURISH Are there any detailed instructions on how to build a cochon de laite rotisserie set up? Or where to buy one? I need some guidance.
This is the way to eat whole pig. That cracklin skin is phenominally flavorful. It's hard to chew sometimes but it's delicious.
Agreed!
Great series, thanks for sharing. As a life long Florida resident I get the best of both worlds. American Southern BBQ, and the Caribbean styles. Cuba and Jamaica both have delicious whole hog traditions.
Agreed you gotta try that southern Cuban rotisserie. .. needs garlic! Lol 💖💖💪💞
Im a Floridian B&R I totally agree

Right Cha Make sho you get some Roti as well. Yes my daddy from Kentucky and Red Rice and beans is better or yellow rice and cabbage 🥬

Young Man ... Dr. You make me very proud. Please keep them coming.
Its awesome to see American people coming together for this.
No bbq sauce... I like that. Real bbq in my opinion. Thanks for the video!
Lol he was offended he even asked about bbq sauce. It’s like asking for ketchup with a ribeye - if it’s done right you don’t need it.
Spending a day here would be like spending a day in Heaven.
You got that right!!
There's no eating pigs in heaven. It's unclean meat.
@@Sean9814 if you are Jewish or Islamic this video isn't for you
