Looks great! It's to bad that you were out of thyme because I find thyme really does elevate any white sauce. Honestly I love fresh thyme so much more than dried. It gives that freshness with a slight peppery and sweet earthy punch , it's just good. Love your channel it's fun and honestly informative.
That is a good recipe to have in your back pocket and pull out when you have to feed some people on a rush but still want to make it a warm meal. I love your cutting board!!!!
Dave IMO maybe you should have turned down your flame. CHAT said simmer. You had a rapid boil. Simmer was correct. Simmer is a slight boil with steam releasing from the sides. Rolling boil, boiled down your liquid But looks good

My changes would be to first saute the onions and garlic in a tablespoon of oil until starting to turn translucent. Then add the wet ingredients and allow them to mix and get hot. THEN add the noodles. The thyme is ok but the parsley is a must.

So once a liquid comes to a boil u turn the heat down and let it simmer which is a low boil...where it's barely bubbling
