I made this cake with cream cheese frosting for a colleague’s birthday - my office gobbled it up! I’ve never been the biggest fan of red velvet cake but the texture of this one was just amazing! Soft and moist without being mushy. The only thing I did differently was replace the extra egg yolk with one tbsp of extra oil because I never know what to do with one egg white. After years of looking I can finally stop looking for a decent red velvet cake recipe - thank you!

That happened to me with Campbell's Bean with Bacon soup. I used to loved that soup as a child but on Christmas Eve the year I was 12, I ate it then was sick that night. Didn't touch the stuff for at least another 20 years, lol! Now though, the only Campbell's soup I can stand is their tomato soup but I do make homemade Bean with Bacon soup and like it.
I first started baking your recipe from pumpkin cookies (after disappointed from many pumpkin recipes out there!) and it was the best ever. Pumpkin muffin and red velvet cake were next I tried and they were incredible. Love that all your recipes are easy to follow with simple method yet with great result. Thank you so much. I made this cake today and the ermine frosting. First off, the cake recipe is awesome. It was easy and the result is so delicious. I need to get the gel food coloring you used. The one I used the cake did not turn out as red, but really don't mind since it was tender and so good. The frosting was a first for me. I was a little more willing to try because the initial steps remind me of making country breakfast gravy and I have some practice making that. The key (and the same with the roux portion of the frosting) is patience and DON'T leave it or stop whisking. Like you mention don't rush it by increase the tempt. It turned out really good too and I am thinking I like it more than buttercream. Any suggestions what flavors of cake it goes well with?
I am eager to try this recipe because it looks so easy. I used to make red velvet back when I was in college. Several recipes alway came out tough even if i tried not to overbeat the batter. I see now that the recipes lacked the fat content that yours has. I did do the ermine frosting which was so delicious and creamy smooth that the less than perfect cake was tolerable. Lol! I don’t think I’ll have any problems with your velvet cake. Thanks for doing all the research so that we can be assured of great outcomes.
Trina Harris put a couple teaspoons of vinegar or lemon juice into the bottom of your measuring cup and then fill it up with milk to the 1 1/4 cup line. Mix, let sit for a few mins, then use in place of buttermilk :)

I feel your pain with fear over some baked goods. Growing up my dad made banana bread and he mixed up the vanilla with mint because they were both in similar looking orange containers. It smelled so bad and tasted awful. I didnt eat banana bread for a while after that

O no! I’m so sorry this happened! 😔 Altitude can play a role here but unfortunately I’ve never baked at high altitude before to be able to advise. Under-mixing, under-baking, or not enough flour can also cause these issues. I wish I could help more. 😔

You can use your 6 inch pans, but this recipe will make enough for three 6 inch pans so make sure you don't overfill the pans. I'm not sure on the bake time but it will definitely be reduced. Be sure to keep an eye on it. :)
I don't have my recipe in front of me, I just remember it says the vinegar is last and it's important to add it last, the world will crash and burn if you add before, oh no!! I've tried to find the answer to one question for months now- as a new baker, when I use convection on my oven (at home), am I actually baking at 25 degrees less than 350? It seems every baker uses convection so I assume that means on convection what the recipe calls for. Please, help a new baker out... Thanks again
Unfortunately I don’t have a convection oven so I’m not really sure what the adjustment is to cook with it. A quick google search says yes set your oven to 25 degrees lower but I can’t say for sure that is accurate. My temperature listed is for a conventional oven. 😊
Unfortunately I think there would be a good bit of adjustments needed here and I haven’t tried it so I’m not sure exactly what would need to be done. I’m sorry. 😔

Red velvet cake is not red velvet cake without Ermine frosting. This is the recipe that we always made by request in our family for Birthdays. It was definately a special occasion recipe. When I was a child I would save all the icing for last and I eat that by itself. We ate it cold from the fridge so it was kind of like the texture of the ice cream in an ice cream sandwich. Such good memories. :). I think we would make a batch and a half of frosting so it was extra thick.
Will this recipe work if baked in 8 inch heart-shaped pans? I'd like to do this for Valentine's Day, and will trace the parchment paper to the heart shape. What would be your suggestions for adding a bit of decoration to a Valentine's red velvet cake?
It will work in a heart shaped pan, but I'm not sure of the capacity of that pan so you will most likely have excess batter. Don't overfill your pan. I'm not sure on the bake time. I think I would do varying shades of red and pink and use different tips to pipe decorations on top. I will be sharing a post next week on basic decoration of a cake that may be helpful. :)

Hey Sugar Spun Run, after my attempt at your German chocolate cake which I commented on, now my wife wants a vanilla layer cake with a berry jelly type filling between the layers. Any thoughts on this? Or do you perhaps have a recipe for it? Seems easy enough at a glance, but I am more of a savory cook, and now just recently trying my hand at baking. I have made a killer NY style cheesecake and a great carrot cake. These regular layer cakes kick my butt every time. I even tried a classic 3 layer coconut cake and the frosting was too runny, much like my German chocolate cake venture. I will keep trying. Thanks for your videos.

I don't actually have a red velvet cake with a cheesecake, but you could use this red velvet cake and the cheesecake from my carrot cake cheesecake. :)
Does the cake have to be stored in the fridge if making the day before due to the cream cheese? And can I add sour cream to the cake batter or does that not work with the buttermilk?
There is no cream cheese in this cake, but with the frosting, whether you use ermine or cream cheese frosting, I would recommend refrigeration. I wouldn't recommend adding sour cream with the buttermilk. You will end up messing with your ratios and I'm not sure it would turn out quite the same.

It wouldn't be a "red" velvet cake if you change the color but some different ones may work. Just be careful because you do have the cocoa powder in there and it may result in an unwanted color

Everything went according to plan, BUT why did mine sink in the middle slightly? I used a 9 x 13 baking dish which the batter filled to perfection. It wasn't easy getting that gel food coloring to dissolve. I still saw tiny bits of it in the batter. I figure the bits really won't show in such a dark cake...hopefully.
@@SugarSpunRun No, I didn't want to leave it in the oven any longer because I was afraid it might turn out dry. Anyway, everyone LOVED the cake. I managed to score a small slice and they were right. It was spectacular, a keeper. People were throwing me kisses. Not a single crumb was left in my 9 x 13 dish. One of the ladies asked me to make the exact same cake for next week's meeting. Personally, I prefer to try some of your other cakes. As a matter of fact, I'm going in search of one right after this comment. BTW, the gel coloring DID dissolve but there were little specks of undissolved cocoa throughout the cake (nobody cared). The only thing I can think went wrong was that I didn't beat the batter enough. I was concerned about beating it too much making the cake tough. There's even a possibility it was cacao instead of cocoa (I don't know if there's a difference). It was given to me in a ziplock bag by a friend. Maybe next time, I'll add it to the buttermilk instead. Well, thanks a bunch for the great work on this recipe.
I actually have a couple of mixers I like to use. If I don't need one with lots and lots of power I use my kitchenaid hand held mixer. If I need to whip egg whites or something like that I have one made by Hamilton Beach, and of course for a stand mixer I have kitchenaid stand mixers. :)

I don’t know how you taste all those cakes and look as beautiful as you do!! This cake is in the oven right now and I’m so excited to bring it to my sister tomorrow she loves red velvet and this is my first try at this cake and with all these great reviews I’m looking forward to eating! Thank you so much. I made this cake today and the ermine frosting. First off, the cake recipe is awesome. It was easy and the result is so delicious. I need to get the gel food coloring you used. The one I used the cake did not turn out as red, but really don't mind since it was tender and so good. The frosting was a first for me. I was a little more willing to try because the initial steps remind me of making country breakfast gravy and I have some practice making that. The key (and the same with the roux portion of the frosting) is patience and DON'T leave it or stop whisking. Like you mention don't rush it by increase the tempt. It turned out really good too and I am thinking I like it more than buttercream. Any suggestions what flavors of cake it goes well with?

I am eager to try this recipe because it looks so easy. I used to make red velvet back when I was in college. Several recipes alway came out tough even if i tried not to overbeat the batter. I see now that the recipes lacked the fat content that yours has. I did do the ermine frosting which was so delicious and creamy smooth that the less than perfect cake was tolerable. Lol! I don’t think I’ll have any problems with your velvet cake. Thanks for doing all the research so that we can be assured of great outcomes.

For ur vanilla cake can u please please tell me what the substitute for 11/4 cup whole milk into buttermilk as I don't have buttermilk on hand
Trina Harris put a couple teaspoons of vinegar or lemon juice into the bottom of your measuring cup and then fill it up with milk to the 1 1/4 cup line. Mix, let sit for a few mins, then use in place of buttermilk :)

I feel your pain with fear over some baked goods. Growing up my dad made banana bread and he mixed up the vanilla with mint because they were both in similar looking orange containers. It smelled so bad and tasted awful. I didnt eat banana bread for a while after that

Hi, this cake has a good flavor but mine came out a little gummy and sunk in the middle while baking, can you possibly tell me why? I live in Colorado, does the altitude have anything to do with this?
O no! I’m so sorry this happened! 😔 Altitude can play a role here but unfortunately I’ve never baked at high altitude before to be able to advise. Under-mixing, under-baking, or not enough flour can also cause these issues. I wish I could help more. 😔

Hi Sam! Can i use a two 6” pans with this recipe? and does the time of baking is need an adjustment if i use the 6” pans? Thank you and I can’t wait to try this recipe for my mom’s Birthday and also the stuffed cookies!
You can use your 6 inch pans, but this recipe will make enough for three 6 inch pans so make sure you don't overfill the pans. I'm not sure on the bake time but it will definitely be reduced. Be sure to keep an eye on it. :)

Hi. For the cocoa powder, is it 3 tablespoons or 3 teaspoons? 1 tablespoon is 15 g.. and youve mentioned 19g..
It’s 3 tablespoons which is about 19 g in this case. A tablespoon of cocoa powder is pretty light, just over 6g. 😊
I don't have my recipe in front of me, I just remember it says the vinegar is last and it's important to add it last, the world will crash and burn if you add before, oh no!! I've tried to find the answer to one question for months now- as a new baker, when I use convection on my oven (at home), am I actually baking at 25 degrees less than 350? It seems every baker uses convection so I assume that means on convection what the recipe calls for. Please, help a new baker out... Thanks again
Unfortunately I don’t have a convection oven so I’m not really sure what the adjustment is to cook with it. A quick google search says yes set your oven to 25 degrees lower but I can’t say for sure that is accurate. My temperature listed is for a conventional oven. 😊

Red velvet cake is not red velvet cake without Ermine frosting. This is the recipe that we always made by request in our family for Birthdays. It was definately a special occasion recipe. When I was a child I would save all the icing for last and I eat that by itself. We ate it cold from the fridge so it was kind of like the texture of the ice cream in an ice cream sandwich. Such good memories. :). I think we would make a batch and a half of frosting so it was extra thick.

Will this recipe work if baked in 8 inch heart-shaped pans? I'd like to do this for Valentine's Day, and will trace the parchment paper to the heart shape.
What would be your suggestions for adding a bit of decoration to a Valentine's red velvet cake?
It will work in a heart shaped pan, but I'm not sure of the capacity of that pan so you will most likely have excess batter. Don't overfill your pan. I'm not sure on the bake time. I think I would do varying shades of red and pink and use different tips to pipe decorations on top. I will be sharing a post next week on basic decoration of a cake that may be helpful. :)

Hey Sugar Spun Run, after my attempt at your German chocolate cake which I commented on, now my wife wants a vanilla layer cake with a berry jelly type filling between the layers. Any thoughts on this? Or do you perhaps have a recipe for it? Seems easy enough at a glance, but I am more of a savory cook, and now just recently trying my hand at baking. I have made a killer NY style cheesecake and a great carrot cake. These regular layer cakes kick my butt every time. I even tried a classic 3 layer coconut cake and the frosting was too runny, much like my German chocolate cake venture. I will keep trying. Thanks for your videos.

Does the cake have to be stored in the fridge if making the day before due to the cream cheese? And can I add sour cream to the cake batter or does that not work with the buttermilk?
There is no cream cheese in this cake, but with the frosting, whether you use ermine or cream cheese frosting, I would recommend refrigeration. I wouldn't recommend adding sour cream with the buttermilk. You will end up messing with your ratios and I'm not sure it would turn out quite the same.

It wouldn't be a "red" velvet cake if you change the color but some different ones may work. Just be careful because you do have the cocoa powder in there and it may result in an unwanted color

Everything went according to plan, BUT why did mine sink in the middle slightly? I used a 9 x 13 baking dish which the batter filled to perfection. It wasn't easy getting that gel food coloring to dissolve. I still saw tiny bits of it in the batter. I figure the bits really won't show in such a dark cake...hopefully.

Anyway, everyone LOVED the cake. I managed to score a small slice and they were right. It was spectacular, a keeper. People were throwing me kisses. Not a single crumb was left in my 9 x 13 dish. One of the ladies asked me to make the exact same cake for next week's meeting. Personally, I prefer to try some of your other cakes. As a matter of fact, I'm going in search of one right after this comment.
BTW, the gel coloring DID dissolve but there were little specks of undissolved cocoa throughout the cake (nobody cared). The only thing I can think went wrong was that I didn't beat the batter enough. I was concerned about beating it too much making the cake tough. There's even a possibility it was cacao instead of cocoa (I don't know if there's a difference). It was given to me in a ziplock bag by a friend. Maybe next time, I'll add it to the buttermilk instead.

I actually have a couple of mixers I like to use. If I don't need one with lots and lots of power I use my kitchenaid hand held mixer. If I need to whip egg whites or something like that I have one made by Hamilton Beach, and of course for a stand mixer I have kitchenaid stand mixers. :)
