As an American boy living in Turkey during the 70’s I was tasked with going to the bakery to pick up a loaf of ekmek for our breakfast. The bakery was not one with pastry cases. It was industrial in that it was a large dark room that housed the oven. The bakers would work only bread and they seem to enjoy me coming down to pick it up right out of the oven. I have not been back to this magical country but have decided to go back this fall. I google mapped Izmir today and Holy Jesus it has grown! I consider those years some of the best of my life. I was so aware of how special this experience was that when the plane lifted off in Istanbul for America tears were streaming down my 15 year old face. Still brings tears now when I recount and feel that feeling again. Nothing like hot ekmek with butter and jam! Oh, and the meals that went along with this bread…..
Excellent recipe, it worked perfectly on my first try. Many compliments from my family. Here is my summary of the steps shown in your video: Total time: 2 hr 30 mins - 25 mins prep - 1 hr 40 mins rising - 35 mins baking Make Yeast Mixture: - Combine 350 ml warm water, 10 g active dry yeast, and 5 g sugar, mix well and set aside for 5 minutes. Make Dough: - Combine 400 g bread wheat flour, sifted, with 5 g salt. Mix well. - Add yeast mixture to flour, mix well with spatula. - Add 30 ml olive oil, mix well by pinching handfuls of dough, pulling upwards, and letting it fall back. - Add another 30 ml olive oil, continue mixing by hand. Dough will be sticky. - Add 100 g bread wheat flour, sifted. Mix with oiled hands. - Cover tightly and rise for 1 hour in warm place Proof Dough: - Pull dough up and away from sides, sprinkle with flour, roll out onto floured surface. - Flatten dough into rectangle, fold each side into the middle, then lightly knead. - Divide in half and flatten dough by pressing fingers outward. Pinch the edges in towards the center until it forms a ball. - Cover with a cloth for 20 mins. Rest Dough: - Flatten into a circle. Fold leading edges inward to form a log, pinching to close seams. Roll out with hands to even the loaf. - Place on parchment paper on a cookie sheet - Cover lightly with plastic wrap, set in warm place for 15 mins. Bake Loaves: - Remove wrap, brush tops with water to lubricate dough - Sprinkle dough with cornmeal - Make an incision in the top of the dough along the length - Bake at 220°C/428°F for 25-35 minutes - Cool on a rack
I used to eat this bread a lot when I was stationed in Ankara, Turkey during the mid 1960s with the US Army. In those days you could buy this bread just about anywhere even on the streets for less than 10 cents a loaf. They used to haul it around in dump trucks [they were open bed trucks] in those days to deliver it to stores. It was not wrapped. I would see a dump truck load of it driving down a street with a guy sitting up on top of it to unload it I guess. Doctors used to recommend it to mothers who kids were skinny or would not eat as a health food. Of course times have changed a lot in Turkey since those days.
That was sixty years ago, bread was delicious straight from the bakers oven, and I was a little kid in old Ankara, 60's and 70's were great times for me over there.. 🍞👍
Small world. I grew up there, my Dad was stationed at Karamursel in the mid 70s, then Balgat in the early 80s. Their bread is the best, no doubt. Will have to try this ekmek recipe.
It was better than a French baguette. However, old Turkish breads are no longer made for some reason. 😔

Excellent recipe. I just made it with wholewheat flour, and it took a little more flour to bring the dough to the right texture. I used all the dough for one bread instead of two, and baked it in a Dutch oven, for 40 minutes. It came out delicious.

So, heute nun habe ich auch dieses Rezept ausprobiert und muss sagen…. Super lecker, danke für die Anleitung! Auch das der Aufwand natürlich bei Hefeteig etwas zeitintensiv ist was man im Vorfeld schon weiß… Es ist sehr lohnenswert und köstlich und natürlich kann man ja auch die Zeit nutzen statt nur 2 Brote Teig für Mehrere vorbereiten die man nach dem auskühlen frisch einfriert und bei Bedarf langsam auftaut! Danke für dieses Rezept! Was natürlich bedeutet das ich auch weitere Rezepte ausprobieren werde! Selbermachen ist immer noch das Beste!
Oh this brings back good memories of the time I was stationed in Balikesir, Turkey way back in 1976-77. We would leave the base and go downtown to have ekemk and chai. It was a nice time to sit among the local Turkish people and just enjoy relaxing. Loved this bread and Turkish "ice cream"

I was stationed in Turkey with the USAF (1978-79) in Ankara, lived on the economy, and traveled around Turkey as part of my job. Most trips were alone and dining in the local restaurants. Often, because of limits on language skills (on my part), the host or hostess would take me into the kitchen to select my meal. I enjoyed the foods of Turkey and especially the breads. I lived above a Bakal (I hope that's the right word) and enjoyed Ekmek almost every day. I've also told the story of stopping between Ankara and Akcakoca (akjakoja phonetic) to buy bread in a highland village that was round, thick and salty, but delicious with a spread of jam (the bread, not the village. I traveled a great deal internationally and the breads of Turkey were the best I encountered. Although I will probably try making some, I can't get into that habit. They are too good and difficult to eat in moderation.
