Hi, from London England, you could add some oil to the counter it doesn't alter the taste of the bread, sometimes adding extra flour can cause the bread to be tougher. It's great when you actually knead the dough. ❤, plus don't wrap the dough tightly as it needs to expand. I use 000 flour it is much finer than 00 bread flour. The bread comes out lighter and fluffy

I wonder why people score yeast bread, my mom never used to score her bread 🍞. I use a little yeast in my sourdough bread sometimes if I’m in a rush for a rise, tge first bulk takes a CB lot less time that way, then I shape & put in the fridge overnight b4 baking. I really like rye bread with more rye flour & little brown whole wheat & white bread flour, I use 3 tablespoons caraway seeds & it’s our favorite now. I use a recipe that makes 2 loves. 😊
