- Chai Tea Flan
(The chai milk)
-2 quarts whole milk
-2 cups maple sugar
-1/4 cup ginger
-6 green cardamom pods
-2 sticks cinnamon
-1 tbsp black pepper corns whole
-1 tbsp all spice berries whole
-3 cloves
-1 tbsp fennel seed
(Reduce by half)
-remove from heat ,add black tea and steep for 3 minutes
-strain
(The custard)
-1 quart chai tea milk
-7 whole eggs
(The candied top)
-1 cup white sugar
-2 tbsp water
(Bunuelo tuille)
-60g egg white
-50g rice oil
-15g butter
-40g sugar
-2g salt
-40g flour
-dusting of cinnamon
(Bake at 350°F for 4 minutes)

It doesn't matter if you call it tea, chai or chai tea.... You used REAL KHADE (raw and whole) spice blend to make it: the authentic way! Kudos Matt!

@@aditvaviju911 i’ve met people from innumerable cultures and backgrounds…. There is a soft way of saying things and a rude way. I am just happy he represented India in some form/shape. Shouldn’t we celebrate that fact first? He liked my comment, I believe he just learned the correct way to say it from my post. I couldn’t tell you the amount of times I’ve come across people from the latin community…. They correct me in the most softest way possible and believe me when I say that latin cuisine is some of the most difficult (check out Birria Tacos for example). Outside India, I miss Indian food because the restaurants are just too different here… guess where I go for spicy gourmet food? Latin places! They celebrate us for sure, let’s celebrate them as well.
Saying chai tea is common in the other 6 continents India is not part of.
@@aditvaviju911 also, to a lot of non-indian people, "chai tea" is more understandable than "chai", like i understand being authentic to the culture, but to the majority of his demographic, they might get confused if tea isn't tacked on.
kind of like, how the "fake wasabi" they give you at crappy japanese restaurants "isnt real wasabi" if someone wants that stuff, they're not gonna say "give me the fake horseradish stuff representing wasabi", theyre just gonna say wasabi lol.

if you're gonna tack on "tea" at the end to avoid confusion why say chai at all? it's just there to exoticize the product to appeak to white consumers and is overall pretty damn annoying
Just made it. Took me a full day, the milk spilled twice, the caramel scorched me, but it did came out as on video and it came out great! What a journey. Thanks Matt!

One of the best Flan I've ever tested was made by Chef Will Goldfarb of Room for Dessert, in Ubud Bali. It was made using local ingredients called Secang. it super delicious.
I remember when I went to france on holiday. I was in a small village, it was raining and I went into a bakery where they sold flans. It was delicious and very atmospheric. Nice video 👍
I have to say this is a really really excellent video. Unique and creative recipe, beautiful shots, with fun and fast editing. I appreciate that the actual recipe is concise but still addresses common pitfalls.

Reduce the amount of sugar (maple sugar if using) to your desired amount

Don't you need to temper the eggs like creme brulle to prevent curdling ?
The chai infusion is not hot, it is at room temperature. Egg need to be tempered if they will be added to hot liquids.
