- My 3 favorite thanksgiving sides
Ingredients:
(For the stuffing gravy)
-4 oz by weight butter
-4 oz by weight flour
-1/2 C carrot
-1/2 C onion
-1/2 C celery
-1/2 C mushroom
-1 tbsp thyme
-1 tbsp rosemary
-1 tbsp sage
-6 cups Chix or turkey stock
-1 quart chopped sour dough bread
-3 tbsp black pepper
-salt and soy sauce to taste
[Marshmallow ]
Ingredients:
-1 oz gelatin
-1.5 oz h2o cold
(Mix let bloom)
-3 oz h2o
-1.5 oz corn syrup
-4.5 oz sugar
Bring to 250°F in a pot
Pour into kitchen aid mixer with whisk
Once cooled to about 212°F add gelatin mix
Mix on high for about 5-10 minutes til fluffed
Toss in ( 0.5 oz butter) then mix for another 30 sec.
Pour into a lightly greased plastic wrapped pan and cover with lightly greased foil.
Toss in fridge
Powdered sugar to cut once set
If you wanna plate it how i did, pour into a container and reheat in microwave or stove when ready to serve.
(Candied pecans)
-2 cups raw pecans
-water for boiling
boil and strain 3 times
-2 cups powdered sugar
-rice oil for frying at 350°F
-flakey salt to finish

Your stuffing gravy sounds great. I've done something similar with mayo for turkey sandwiches. Onions/celery/sage mayo and bread of choice = turkey and stuffing sandwich.

Godly Honey Roasted Pecan Recipe:
Pecans+Honey+Thyme herb on a sheet pan bake at 300F(150c) until honey is nicely caramelized brown. Toss pecans with spatula every 10 minutes, throughout baking. When done baking sprinkle with salt, while still sticky. The honey layer hardens to a crisp when cool.

The owner used to make this at the cafe I worked at to put on the sandwiches he serves. I always ate his stock and the co owner would get pissed. Best thing he made for sure!

BOILING the pecans 5 times is way over kill because you killed the flavor and the oils away boiling is not necessary. Just bake them pecans for at least 10 minutes in a 300 degree oven so that will contain all the oils and flavor and natural sweetness baking is better you contain instead of losing. 🤓🥊
