I used to be all about measuring with a food scale, but then I baked with a trained pastry chef... She kept telling me not to judge her for not being exact... Baking, I still feel I should weigh, but I consider what you did here cooking and I cook with how I'm feeling. Just a bunch of guesstimates. Even last night, I was wondering if I added something, like you with the vanilla, and I was like, this is homemade bourbon vanilla, can't hurt to add a bit more... I'm down to try these syrups and possibly incorporate them into our pumpkin pie martinis... Might make it more cocktaily..

I would refrigerate this one because of the pumpkin. I typically keep my syrups in the fridge anyway (just cause it takes me a while to get through them) but the vegetable addition here makes that seem even more prudent. Let me know how it goes!

I don’t see why not! I have not personally tried it, so I can’t attest to the success. But as long as you follow proper canning procedures, seems like it would be safe :) Let me know if you try it!

I am making this with organic pure maple syrup. Pop will love it over his carb smart vanilla breyers ice cream!

I tried to make the brown sugar version, but it didn't thicken much at all. How long do you let it boil and then simmer?
