Blueberry Muffins with Streusel Topping

  • Blueberry season is in full-swing here in Michigan, and we are enjoying the harvest! These quick and simple muffins are easy to make and feature a sweet and crunchy streusel on top of a moist blueberry filled muffin.
    Streusel topping
    2 TBSP brown sugar
    2 TBSP cold butter
    1/4 cup flour
    1/2 tsp cinnamon
    Blend all ingredients in a small bowl with a pastry cutter, a couple of knives or your fingers until small pieces form. Set aside.
    Muffins
    1 cup milk
    1/4 cup vegetable oil
    1 egg
    1 tsp vanilla
    2 cups flour
    1/2 cup sugar
    3 tsp baking powder
    1/2 tsp salt
    1 cup fresh blueberries
    Preheat oven to 400 degrees.
    Take a medium muffin pan - you will make 12 of this size - and grease or line with paper baking cups.
    In a large bowl, beat together milk, oil, egg and vanilla. In a small bowl, combine flour, sugar, baking powder and salt. Add the dry ingredients all at once to the wet ingredients. Stir together until just moistened, and now raw flour remains. Gently fold in blueberries.
    Distribute the batter evenly among the 12 compartments. Top each with about 2 teaspoons of the streusel topping. Bake at 400 degrees for 20-25 minutes until tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

    Those muffins look so good. The first thing we had to make in home economics class in 7th grade (required for all girls) was muffins. Good memories of good smells and a sense of accomplishment. Thanks once again Kevin.

    You should do an episode on Michigan peaches. They seem to have shorter season, and there is nothing quite like a Michigan New Haven peach.

      Hi Scooter - I think I may have already missed peach season here in Michigan. I've been finding it hard to get really good peaches the past couple of years. Many of them have a mealy texture. Thanks!

    I can't wait to try this. I love all your videos and have tried many of your recipes. It all began with my search for a good recipe for Golumpki (stuffed cabbage rolls) like my mom used to make during the holidays. It was delicious. I also love learning about and seeing all the different brands of vintage appliances and kitchenware, both large and small. I recently found a Vintage Stainless Steel Farberware Electric Skillet for $7 at a thrift Store. My Aunt has a stove like the one on the Bewitched show that you recently featured in a video. Is the warehouse/museum ever open to the public? It would be fun to see the collection. Thank you!

    First of all those muffins look delicious. Second what do you call those little plates that you have with the blue like starburst on them? I have several of those that I found a few years back at our Goodwill. I love those plates they're perfect size for just about anything any snack or dessert or about anything my grandson is eating. I just love them they're gorgeous but I don't know what they're called. And you're usually pretty knowledgeable about what things are called

      Hi Brenda! The pattern of that side plate is called Swiss Alpine and it was made by Marcrest China. This pattern was made in the late 1950's. It is a great design! I really like the use of blues and greens together. Enjoy yours!

    Although I strain every nerve NOT to have to turn on the oven in Summer, that's not the real reason I never bake with fresh berries. I can never seem to get through the recipe without gobbling all the berries up. I'm only human.

    Dear Kevin ; those are beautiful 🫐 blueberries. Do you ever dust the berries with flour so they don't sink to the bottom as older recipes suggest ? I haven't but wondered about your experience with that technique. Thank you for posting this recipe.

      Hi lightmarker! I have dusted berries (and other add-ins) with flour before and found that it doesn't seem to make a huge difference. In my experience, if berries are heavy they tend to sink a little in the batter no matter what, but you can see that there were many berries at the tops of these muffins, also. Lighter things like raisins tend not to fall as much. Thanks!

      @@cavalcadeoffood Thank you ! That answers the question for me . When you were talking about corn it reminded me of our farmer neighbors who grew Butter and Sugar corn and it's a short season. I would ride my horse to the farm early and buy 2 dozen dew covered ears ,go home and have that delicious corn for breakfast.
