Blueberry Muffins with Streusel Crumb Topping

Hello guys! Today's recipe is Blueberry muffins. These super moist Blueberry muffins are easy to make and are made healthier by using Greek yogurt. Crispy on top due to streusel crumbs (flour, sugar and butter). The good thing about this delicious recipe is that you can use fresh or frozen blueberries if they are not in season and are always available in the supermarket. It is perfect for breakfast or snack and you can served warm or cold with a cup of coffee or tea.
INGREDIENTS you'll need:
For Streusel Crumb Topping:
2/3 cup all purpose flour (87 g)
1/2 cup sugar (100 g)
1/3 cup unsalted melted butter (75 g)
For Muffin Batter:
2 cups flour (260 g)
1 tbsp baking powder
1/2 tsp salt
3 eggs (M)
1 cup sugar (200 g)
4 tbsp unsalted melted butter (60 g)
1 1/4 cups greek yogurt (312 g)
1 1/2 cups blueberries (frozen or fresh,
285 g)
PROCEDURES
- Combine all purpose flour, sugar and melted butter, then mix well.
- Chill in the fridge while making muffin batter.
- In a medium bowl, combine all purpose flour, baking powder and salt, then mix and set aside.
- In a large bowl, add the sugar, eggs, greek yogurt and melted butter, then beat.
- Add dry mixtures, then the blueberries then mix well.
- Don't over mix.
- Add 2 scoops of batter to 12 muffin tin lined with muffin liners.
- Top 3-4 blueberries and 1 tbsp streusel crumb in each muffin.
- Bake at preheated oven at 190 C for about 18 to 20 minutes or until toothpick or skewer
inserted comes out clean.
- Let it cool in the tin for at least 5 minutes before removing.
- Place on the wire rack to cool completely.
- Serve warm or cold with some coffee or tea.
- ENJOY!
*You can store the blueberry muffins in an air-tight container for 3 days at room temperature or freeze it for up to 3 weeks or more. To defrost, microwave for 45 seconds to 1 minute.
