    If you have an instant pot with a yogurt setting, that is the ideal warm place to put your dough for rising. And sourdough bread, with sharp cheddar cheese, makes the tastiest grilled cheese sandwich.

    You can effect a rise by unplugging the bread machine for as long as needed. Then plug in and start the kneed again. After the knead you can remove to form loaf to bake in the oven or just remove the paddle and bake in the machine!

    I haven't had a bread machine in years. I have too many kitchen appliances and found it took about as long to do bread in a bread machine as in the oven. Love sourdough bread.

      It probably takes the same amount of overall time. But what I don’t have to do is the mixing and the kneading, so it’s easier, And while the machine is kneading I can be doing other things.

    I'm just gonna say it... this is my absolute favorite non-discard recipe so far! So simple since there's no need for a kitchen scale and minimal handling, let the bread machine do the work for you! Soooo excited you shared this video!!!

    Weighing ingredients is just a different approach. It’s common in Europe, because one cup of packed four has much more four then one cup of fluffed or sifted flour. This has an impact on the hydration (ratio of water to four) of your dough. Bread four can handle a large range of hydration levels, so precision isn’t necessary unless you’re attempting perfect loaf to loaf consistency.

    A tip about the bread machine, as you are rising the dough outside the machine, before you put the dough back in to bake, you can pull out the beater. That way it doesn't tear the bottom of the loaf when you take out the finished loaf.

    That’s similar to the way I prepare bread. I use the bread machine to mix and kneed the dough but I don’t bake it in it. My machine is much too small, so, I let it rise again and bake it in the oven. I agree with you about measurements. My sourdough is 2 1/2 yrs. old and feeding it at this point is second nature to me. I’m glad you posted such an easy recipe. Thank you.

      Sometimes I’m tempted to make a crusty bread by baking in the oven with water in another pan to steam it. Haven’t done it yet tho.

    Your bread looks delicious. I'm glad to see you don't weigh everyting too. I also am to busy to deal with all the hasell & fuss. I use my bread machine to mix everything then take it out to rise & bake in a loaf pan in the oven. Thanks for sharing your bread with us. Blessings.

    I have used bread machines of and on over the years but I have never tried using the dough function and then removing the paddle and then the bake function on my machine. I just did dough and them my oven, this is a game changer for me. Thank you for your video.

    Good point on the scale! I was weighing it and now I can of throw some flour in and through it in the fridge... Than being it out, add water and let it get to room temp and it's good to go! Been alive since Sept 1st! I'm so excited I kept it alive that long lol

    Yes!!! I'm terrible at doing the weighing everything. I appreciate that you are using a bread machine. my family thinks grandma needs one and grandma prefers working dough. 😄 Keeping this recipe in case they end up gifting me a machine. Be prepared right?

    The loaf came out beautiful. I would add some sugar to help with the browning. Some butter would be nice too. I like enriched breads. I make Artisan sourdough breads with great results and that’s just FWSY. I’m experimenting making a soft sourdough sandwich bread, and will try this. Thanks for a great video!

    OMG I never realized I had a "bake only" cycle on my bread machine until watching this! Mine is a "Breville The Custom Loaf" bread machine. I'm going to try this today and hope it works. I will update this after I do. UPDATE: So not sure what I did wrong, other than I decided to bake it in the oven like so many others on YT. Everything seemed to be going according to plan like the video. Maybe it was the 'pullman' loaf pan? It didn't rise as much as I hoped and came out and felt really heavy. Cut into it after it completely cooled and it was dense. I'm thinking with sourdough the best way is the 2-3 day method.

      Thanks for the update! My bread came out dense a few times till I figured out the best place to let it rise. Now I actually do an overnight rise in the oven with the light on.

    Removing the hook is a great tip! I remember we briefly had a bread machine when I was a teenager (my mom always made homemade bread for her food allergies so I grew up spoiled 😂), and I never quite knew what to do with the giant holes in the middle of the slices.

    I've never used a bread machine, but I'm guessing that I could make it the old fashioned way, too! The bread looked really good. You did get a very nice rise! Even though I do have a scale, I might be more inclined to use the "normal" way of measuring ingredients, too. Weighing stuff just seems way too complicated and time consuming to me. Thanks for the video! I'm loving this collab!

      I’m sure it could be hand mixed and kneaded and baked in the oven. I’ve thought of trying it in a loaf pan but haven’t been brave enough yet. Haha

    I have a bread machine and I only mix my bread or dinner rolls in there I haven't done sour dough so was glad to see I can use it to mix and finish out of the bread maker. I don't like how the bread maker cooks bread

      I now bake bread every week, before it was always overwhelming.

    It seems you can shape and let it rise straight in the machine. This is how you would bake sourdough in a bread pan. And once you have the timing down, use a delayed bake start, that way you only have to interact with the machine once after the initial mix.
    Additionally, you can shut off the dough cycle early after mixing and allow the dough to rise longer at room temperature to adjust the amount of sourdough taste you want in the bread.
    Lastly, a bit of sugar helps with the colour if you care about that.

      Ok, dude, that was REALLY helpful. I’ll have to try letting it rise in the machine, however my house runs cold, so I usually set stuff on the heating mat. I’ll give it a try though for sure. I didn’t know about the sugar thing, I don’t mind the light color, but if I’m ever giving any as gifts I may try that. :) Thanks so much for the tips!

      Oh wait… I do have a question, am I understanding that a longer rise will make it more tangy and have more sourdough flavor?

      @@LorellaPlanBeeOrchardandFarm Yes. Higher temperature favours yeast, which allows for shorter rise time. Lower temperature favours lactobacilli bacteria, which favours flavor at the cost of a longer rise.
      I typically rise for 12+ hr rise for flavour by adjusting the starter amount and temperature. Once you know the benchmark volume growth you're after, you can adjust these factors and just wait for the dough to hit the mark before baking.
      I'm just researching bread machine baking, but have baked in oven for a while. The same logic should apply.

      This is a game changer for me. I did an overnight room temperature rise and not only was the flavor so much better, the bread was super soft. It was by far the best loaf yet. Thank you so much!

      Yes! I think if you could adjust the rise time that would be key.

      Yes you can. Use the homemade cycle and put the times in. You might be able to google the times. Do it overnight.

      1 1/2 C + 1Tb water
      1/2 C (fed) sourdough starter
      4c +3 Tb bread flour
      2 tsp salt
      Add all ingredients to bread machine and run on the dough cycle.
      Transfer to a bowl that has been lightly coated in olive oil, cover and let rise until double in size.
      Bake in bread machine.
      Let cool completely before slicing.

    To me this loaf is under baked. I bake sourdough in a dutch oven at 500 F. I like my crust crackly and crispy.

      Unfortunately, that bread maker walked itself off my counter during a kneading cycle last year and broke the lid. I had to get rid of it and haven’t replaced it yet. So I’ve been using my kitchen aid mixer. I had the bread maker for YEARS and don’t remember what brand it was.

      Good question. I got mine from a friend. You can make it from scratch, but I haven’t ever tried that.

      At the beginning of the video (in the first 30 seconds) I gave exact measurements of all four ingredients. They are all added at the exact same time. Im not sure how that could have been more clear…
