If the sauce makes the brisket taste better then you need to reevaluate how you smoke your brisket cause if you are a true texan you can throw down.

Steve! Could you PLEASE make a side trip to Austin and check out Stubb's BBQ? Here is the rundown on this place: In the 1970′s, Stubb’s restaurant became the heart of an explosive music scene. Stubbs was ground zero for musicians like Joe Ely and Stevie Ray Vaughn. Other famous musicians who would “play for their supper” included Muddy Waters, John Lee Hooker, Willie Nelson, Johnny Cash, Robert Cray, George Thorogood, Clarence “Gatemouth” Brown, Linda Ronstadt and the Fabulous Thunderbirds. Although small in size, Stubb’s Restaurant was always filled with good friends, great music and plenty of Stubb’s Legendary Bar-B-Q. The Lubbock location is now closed but the legend continues here in Austin at 801 Red River. Come on down for some Live Music, Cold Beer and Great Food!

I also like Pinkerton a bit more than Truth.
If you return for more BBQ, maybe try Killen's in Pearland, Blood Brothers, and Gatlin's.
If you return for Asian: Bori Korean Stir-fried sookju ribeye is the best under $20 lunch
If you want the best sausage ever: City Market, Luling Texas - this comes from someone that loves Scott, Louisiana smoked boudin
If you head to New Orleans, try Drago's and Pascal Manale's BBQ Shrimp - heck google it.

Steve, my man! I think you ate about five flies during the filming of this video. My wife and I sat outdoors at Pinkertons, saw them buzzing, immediately moved inside. Second comment is that I'd never willingly get turkey as a full carnivore when beef is available, but if you are going to do it, I think you need to eat the turkey before the brisket (because brisket is much richer and more flavorful). Lastly, I agree with some other comments about sauce--don't do it (not on brisket). Enjoy the smoke, the beefiness, and the rendered fat, but putting sauce on brisket is gonna get you kicked out of Texas! (Texas sauce isn't that great anyway, LOL.) Also, Pinkerton's brisket is good (really smokey), but their pork ribs are dry and overdone.

Went to Truth BBQ yesterday for the first time. We waited in line for nearly 2 hours and said this trip to Truth would be a 1 time deal because I don't care to wait that long. HOWEVER, after eating this BBQ I'd gladly go back and wait in line. Everything was excellent. Sadly, my brisket was more on the lean side than moist. It was still good but my friend's was more moist and better. The sausage gets top rank for me. That jalopena cheese sausage was awesome. Even their house sausage was the best I've ever had. The ribs are great. Their sides (potato salad, coleslaw, brussel sprots, and corn pudding) were all A+. I'm definitely going back. Maybe sooner than later lol.
I rank it above Killen's although I'd say Killen's brisket is better at this point. I gotta give Truth another go before I can say for sure which brisket is truly better.

Truth bbq looks like they are not doing it right vs alot of better places in Texas..that brisket looked dry prob cause they store it in a warmer over night, best thing Truth had by look there is turkey, rest looked pretty weak and no way would i wait for 3 hrs to mediocre bbq u can get anywhere...Pinkerton looked more proper meat looked way better and juicier, and their beef ribs looked real good...and that general store last place you went, their brisket looked the worst, no smoke ring, over done, prob stood around, chicken may have been the highlight there.....Do yourself a favor, go and try Goldees BBQ, rated number 1 in the state

“Let me try the bbq sauce, to see what it taste like. Ooh it has bbq favor to it” …cmon man, it’s bbq, of course it tastes like bbq. I wish you would go more in depth vs stating the obvious.

Henderson and Kane is quite overrated and over priced. The boudain is 12.50/lb and quite average.
The other two are on a different level in comparison.
