I just took up the art of smoking meats and I can tell you it really does take a lot of passion. Waking up at 2am to start something. Babysitting it for 12 - 20 hours. Using different types of wood for different flavors. Different techniques, etc. But the finished product is always amazing.

Having lived in Tennessee, North Carolina and Texas, I will say all 3 have amazing BBQ. Best dry rub ribs and smoked catfish is Tennessee hands down. Best pulled pork is North Carolina and the best beef bbq is Texas.
