Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I'll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

@@SlapYoDaddyBBQ Houston is such a diverse city. I know some great places for BBQ and other types of cuisine. TLH is a must. They're food was fabulous. So many places so little time. I saw you btw on Dumpling at Goldees. That was cool. We're going next Saturday. I'm very impressed with what they are doing there. Looking forward to seeing you my friend. : )
We were in Houston in Nov. 2019. Our daughter took us to Pinkertons. Their Brisket, Sausage, Chicken, and the sides were delicious, They were sold out of beef ribs so didn't try them. But I have to say I was most impressed with their pork ribs, possibly the best I have ever had. I'm from Kentucky so I've eaten my share of pork ribs and Pinkerton's are really good. Pinkertons is my new favorite BBQ joint, we will be back when we are in town !

Harry was in Houston... and didn't give a notice... It's not like we'd find him to make him cook BBQ for us all day. But Pinkerton's pretty good. I think it's nicer than Truth BBQ. It's nice because it doesn't have the long line that Killen's BBQ has. Jackston Street is decent, but I think it's more about being a post-baseball game BBQ place since it's walking distance to stadium. The Pit Room is consistent, it's not the most wow, but you feel it's a step above the standard metric. But here's a thought... open a Harry's BBQ in Houston? yeah? Franchise opportunity there!

@@SlapYoDaddyBBQ Harry, Houstonian here, put Blood Bros., Tejas, Truth, Pit Room and Roegel's on your list. Pinkerton's in a top 3 in town for sure though. I beleive David did the pits for Tejas as well.
Tried the brisket... best cut of meat I've ever had. Pinkertons is a must if you're in H-town.

Food looked really good. I don't think I've ever heard of a pit master that doesn't eat pork that he cooks.
I know of one. For him it's a health issue. But his family eats pork and let's him know if his seasoning is right. But yeah, not what one might expect.
Can’t wait to see if HTown or ATX has the better bbq. Truth, Pinkerton’s and Killen’s, all mentioned by others are definitely the best in Houston IMO!

Been trying to cook brisket to perfection. I know that the meat is important when choosing one but the cooking part, does it have to be low and slow to achieve tenderness or hot and fast, reach 170 wrap and then probe tender until peanut butter consistently? Pleas help

Do you get the santa ana winds where you are? Any tips on trying to keep the smoke clean using a Weber kettle in the wind?
I'm using a 22" with the BBQ dragon grill stone. The smoke is super thick, I think it's because of the wind.
Put a wind shield around your Kettle or move it to a shielded location from the wind. It's a portable grill

Hey Harry. I was wondering, have you tried the Pappas BBQ chain here in TX while you visited? I’m curious to hear your opinion because I think it’s pretty damn good for what it is.
Only 4,850 restaurants serving BBQ in Texas so before I die, I plan to eat at as many as I can. ..... burp!

Visited this past week. The servers and atmosphere was great. The food in the other hand was good. Sorry for disagreeing for opinions on the greatness but was not impressed on the hype. I travel an average of 3 times around the world and literally go through 49 states every year. Had barbecue in over 100 different locations in 2021 alone as I love barbecue. Their ribs and brisket were a 8 of 10 but not worth $70-80 per plate. But "fantastic and out of this world" is not being honest.
Perhaps I just got lucky and the crew was on-point that day?

What's your favorite in Houston?
$70-80??? I was just at the San Antonio location 1/17/24 and had 2 slices of brisket, 2 sausages, a pork rib, beans and coleslaw and it was $30.
Any place in Texas that serves sauce by default on the meat does not make the cut. I have been here and there is MUCH better close by.
What do you recommend?
