I've had 3 different issues with tubeless. Finding the leak is usually easy - I keep a spray bottle with soapy water in it and will spray the whole tire/rim. Most commonly, it has just been a slow leak from a tire that was needing to be replaced anyway. Adding sealant and making sure to slosh it around a bit then filling it back up got the sealant to where the hole was. I usually get this when the tires have lost all tread in the center and I'm just being lazy about getting another tire. I had a leak where my tape had come loose around the valve core. The bubbles were showing up on almost every nipple. I took the tire off, and found a lot of sealant booger around the valve core inside the rim when I took the core out. I removed the tape, cleaned out all the sealant, re-taped the rim with DT Swiss tape, and put humpty dumpty back together again. That did they trick. There was also one set of tires that could just not hold air, even from day one. I bet I added sealant 3 times, and the tires just kept soaking it up. For that reason, I will never again buy WTB tires.
Damn… thanks for this.. definitely going to add a bit more sealant but I did hear it sloshing around when I threw the wheel on the bike before leaving the house for the ride… spray bottle with soapy water is the next step!! 🙏🏻 thanks for watching!! 👍🏻
I don’t believe it was the headwind specifically, the soup strainer is adding significant drag so your efficiency is lost as you cut through the wind. That’s why you never see a race horse with a moustache. Physics.

Yep, put some soapy water onto the valve. The same thing happened to me once.
when I've had a similar issue with tubeless it's required a re-taping of the rim and/or attention to seating the valve (or volve, if you will)

It's always the rim tape.
Maybe add another layer of tape. WD-40 type stuff on the volve core. Good luck.
