Just by reading or seeing "chicken breast" I can already taste and feel the bland dryness in my mouth. Yuck. My husband and daughter were recovering from stomach problems and I wanted to feed them starchy food and clear broth. I had seen this recipe before and gave it a go for a quick fix. It was a huge success and they both really enjoyed their grease-free bowl of (fake) pho! Sure it’s not the authentic kind (I don’t think the video claims so either) and it’s not as rich as the bone broth but for my situation it worked great. Now as I was making it, I felt like my Vietnamese friends would get mad at me if I called this pho (I’m Korean) but it’s good enough for a 30-min fake pho ;)
I totally disagree with the part about putting all the noodles in the broth. The noodles will get too soggy eventually, and the broth will become too starchy. Instead, have a separate pot with just water, bring the water to a boil. soak the noodle in the water 5-10 seconds (depending on how hot the water is) and take it out once you’ve reached the perfect softness. Then you can ladle the broth over the noodles in your bowl.

You cannot make pho in thirty minutes. It will not taste the same and it will probably ruin the taste quite a bit. Also the coloration of your broth is a bit off. Pho takes 12 hours to make, shortening it to 30 minutes will ruin it.

15 MINUTE PHO (single serving) Place serving of rice noodles in a bowl and add enough hot tap water to cover, and set aside. Fill your choice of a single serving microwave safe bowl, preferrably with a handle, 2/3 full with hot tap water. Stir in wonton soup powder to desired taste. Also stir in chinese five spice powder to taste starting with a very small amount. Heat broth in microwave 2 to 3 minutes or until as hot as you prefer. While broth cooks, slice desired amount of prepared cooked meat of choice. Rotisserie chicken, ham, leftover bacon, leftover rib meat.... any meat you prefer. Slice a few green onions as well. CAREFULLY REMOVE HOT BROTH FROM MICROWAVE. Shake in white pepper to taste. Garlic and onion powders as well as ginger powder can be stirred in if desired. Carefully add desired amount of noodles. Add meat and green onion plus any other desired topping. Top with a few drops of sesame oil and hot sauce to taste. Ready to eat!
I think that Pho is such a complex and delicate dish that 30 mins are definitely not enough time bring out all the flavors. Why would our soup broth be so famous? Because we put efforts on it, we spend time and patient to get it perfectly flavored, it’s the roasting, the time-consuming stewing process that produce such a beautiful broth and tender slices of meat. And we dont cook our rice noodles all together with the soup like that, we blanch it over hot steaming water, then serve it later with the broth. Not boiling them all together in a pot.

This recipe is really wrong from the beginning. Pho isn't a dish that can be cooked in just 30-min dude.
-Boil the chicken with the broth? Oh, I don't think so.
-If you slide a lime like that in Vietnam, I hope God will bless you in getting married.

-Fish sauce into the broth, are you sure dude?

15 MINUTE PHO (single serving)
Place serving of rice noodles in a bowl and add enough hot tap water to cover, and set aside. Fill your choice of a single serving microwave safe bowl, preferrably with a handle, 2/3 full with hot tap water. Stir in wonton soup powder to desired taste. Also stir in chinese five spice powder to taste starting with a very small amount. Heat broth in microwave 2 to 3 minutes or until as hot as you prefer.
While broth cooks, slice desired amount of prepared cooked meat of choice. Rotisserie chicken, ham, leftover bacon, leftover rib meat.... any meat you prefer. Slice a few green onions as well.
CAREFULLY REMOVE HOT BROTH FROM MICROWAVE.
Shake in white pepper to taste. Garlic and onion powders as well as ginger powder can be stirred in if desired.
Carefully add desired amount of noodles. Add meat and green onion plus any other desired topping.
Top with a few drops of sesame oil and hot sauce to taste. Ready to eat!

I think that Pho is such a complex and delicate dish that 30 mins are definitely not enough time bring out all the flavors. Why would our soup broth be so famous? Because we put efforts on it, we spend time and patient to get it perfectly flavored, it’s the roasting, the time-consuming stewing process that produce such a beautiful broth and tender slices of meat. And we dont cook our rice noodles all together with the soup like that, we blanch it over hot steaming water, then serve it later with the broth. Not boiling them all together in a pot.

Or just ask your mom to make it for you, my mom makes it very delicious and she usually make it overnight so that the flavor can really stand out
