I guess if you wanted deep fried but didn’t have a frier then this recipe is for you but I would expect the oil to be splattering all over my oven causing a mess
You call that so much effort? In the last fry video I saw, the guy put them in the fridge while soaking the starch out, after parboiling, and after the first fry. A literal day of just cooling them for hours in between every step of the double fry for that Michelin quality
@@Aurelean42It is quite a lot of effort and or is also just really frustrating to do because of all the odd components. If you don’t have a big kitchen this can get really messy. Pouring the oil clumsily in the pan, taking them out while your oil is smoking and setting off the fire alarm all while making a big mess as you flip them in the oil, it all is just a bit much.
Alternative approach that seems to produce crispy fries with less oil: coat in cornflour (UK) or cornstarch (US) slurry. See America's Test Kitchen's video
Ahhh so fry them in oil with the oven rather than the cook top. Look delicious but I cracked up when I saw the amount of oil. I think the whole idea with oven fries is a slightly healthier fry by skipping all the oil.
Oh my gosh, thank you so much for this recipe! I've never made potatoes like that before. I've always tried to make something similar, but I always end up with burnt potatoes. These were amazing!!!
Honestly adding hot oil and cooking in that oil using the oven isn't very different from just straight up frying them. Shallow frying would be about the same since we're really just cutting down how much oil gets used (parboiling the potatoes first is a goated move regardless tho)
For me the big problem with every way to make fries other than frying it takes way longer and it makes way less. You’d need half a dozen baking sheets and the oven to match to make fries for a dinner with a couple people over.
Don't fry your fries...let your oven fry them. It's like a shallow " fry daddy " and you have to triple rinse, par boil, and vinegar blanch them first? I just slice, rinse once under the tap in a colander, microwave for 1½ mins, butter each with spray butter & bake at 425°F for 12mins
From what I learned, most deep frying is done improperly which is why it is unhealthy. If done correctly the technique doesn't leave your food greasy and filled with oil. I can't remember or find the research I read on it a few years ago, but I remember being surprised at those conclusions.
What makes fried food unhealthy is not how it's fried; rather, the cheap, low quality seed oils (aka - vegetable oil or vegetable shortening) the food is fried in because it oxidizes in your system and therefore destroys your cells over time. That's why you always here him say he uses Avocado oil because it has a higher smoke point and does not go through a high heat/chemical process to extract the oil as do the others (cotton seed, palm, soybean, corn, canola, etc.) Animal fats however, such as tallow (rendered beef fat), lard (rendered pork fat) and schmaltz (rendered chicken fat), are perfectly safe and healthy to fry and consume. They have naturally higher smoke points and do no oxidize as easily as the commercial stuff.
I just use store brand frozen fries straight from the freezer, slather them with a coating of oil, place on an oiled cookie sheet, and bake for 25-35 minutes (total time depends on how dark you want them), turning them at least once.
A less oily way to make this for everyone complaining in the comments about the amount of oil would be air frying or on convection setting using a double “fry” method, this way you don’t burn the fries because no oil but you still get the crunch
Ik everyone saying the whole point is not to use oil but I’m doing oven fries cause I’m lazy and scared of spilling hot oil in a pot 😂 so this actually my favorite way to make them also first time I made these they were the best fries I’ve ever had seriously. The second time I forgot what seasoning I used the first time so they weren’t as good but the crispiness u get with this technique is crazy!
Fun fact: Americans call it French Fries because they are Chupid, no really because they saw years ago some french people cook these types of "fries".. Its called Chips.
2 minutes in the penalty box....for elbowing. As a former hockey player.....that was a Supreme Elbow....Head High, with opponent, right on the Glass! Lights Out!
I mean if you're dumping like 2000 calories worth of hot oil on your oven fries, you might as well just deep fry them unless you're only concern is making less of a mess 🤔🤣
I’ve never been that scared of my peeler, but 100% am I afraid of my mandolin. My first time using it I lost my fingertips. They still have nerve damage.
My dude, I like a lot of your methods, but just use an air fryer on the last step. It should be said the rinsing and par boil is still important for boss mode fries. 🍟
These were nuts, try it out!
Blanching Water:
6 quarts water
2 tbsp white vinegar
1 1/2 tbsp kosher salt
Got 'em!!!
Mmm my own technique, you know what's up Chef Sonny 🤝
Yo beef tallow is a game changer as well for fries, Sonny.
Whats honestly the difference between using regular salt and kosher salt?

I mean the whole point of oven fries is too avoid the oil but if you're short on oil this could help
I guess if you wanted deep fried but didn’t have a frier then this recipe is for you but I would expect the oil to be splattering all over my oven causing a mess
Maybe try the oil spray?
Isn't this basically frying the taters in hot oil?
To me, the whole point is avoiding the use of a fryer or gallons of oil, so there is some point to it
Nah the point of oven fries is to avoid deep frying in your home. If you avoid the oil altogether they're not gonna be fries.
how to make good oven fries: deep fry in oven
Made me lol 😂
I just wanted to say that.
he he he ... So true, Bobbie.
My oven would smoke like crazy if I added that much oil in a pan at 400 degrees.
Looks delicious, but I though the whole point of oven fries is to not use any oil, if you're going to use oil you might as well just fry them
You still put oil on oven fries. You just don't put that much. But you do have to use oil or oil spray
You have to use oil if you want food to be cooked good no matter what, and even meat has built in oil from nature, everyone knows that lol
Olive Oil works best for regular oven fries. Adam Ragusea uses a similar method just no hot oil .
Lol, if I'm going to use so much oil, I'd rather fry them in one.
But then you gotta do it in batches. And you really think that's a lot of oil? Try deep frying and see how much you use then.
@@greekfire995oil in the final product genius, odviously he isnt filling a 30 gallon fryer with oil 😂
Decent oil can be expensive. This cut down on the expense. I like that.
Right
That one fry that fell 💀 💀

Fridge is still talking mad trash about you in the backyard to whoever will listen.
This comment improved the quality of my life
Great place to use all those bacon drippings you have been saving!
I don't think that they are not good, but this is so much effort vs frying :)
You call that so much effort? In the last fry video I saw, the guy put them in the fridge while soaking the starch out, after parboiling, and after the first fry. A literal day of just cooling them for hours in between every step of the double fry for that Michelin quality
A bit healthier

The crunch sounds so good. And Bro...spinning elbow!!! Respect 👍
Could do this style with beef tallow thanks
Coat in a potato starch slurry before baking.
Works great for sweet potatoes too.
Now to give us a checkers fries recipe 👀
Wow !!! Those look delicious 😋
that looks scrumptious 😋
I can see this working great with the air fryer
Oh my god they look wonderful
So, pan fried?
The best oven baked fries
Step 1:
Fry them
This is just shallow frying in the oven instead of a pan. I don't think this really counts.
@alext6933 it does count, there's no better way to do it in the oven.
Seems this is still frying, but now frying at a lower temp, meaning more oil is absorbed into the fry.
I’ll take some!!
With warm Ketchup!!
Your channel is so cool. Thanks man.
Oh my gosh, thank you so much for this recipe! I've never made potatoes like that before. I've always tried to make something similar, but I always end up with burnt potatoes. These were amazing!!!

Nice crunch edit
brah did a spin move on the fridge
I know how you kids like em FLOPPY!!! AAAAAHAHAHAHA!!!

Niiiiiiiiiiiiiiiiiiiiiice!!! I came into the comments to say exactly this. Beat me to it.
Lmao that’s just a complicated way of frying them 😂
For me the big problem with every way to make fries other than frying it takes way longer and it makes way less. You’d need half a dozen baking sheets and the oven to match to make fries for a dinner with a couple people over.
Umm duh, just buy bagged fries with company...
I really enjoy watching your videos! I don’t cook very much anymore age and disabilities restrict this but I enjoy watching a pro.🎉
Mind blown. Instead of deep frying on a stovetop, just deep fry in the oven. Genius.
You reviewed frozen fries recently. The Idaho frozen fries are good enough but the fast food fries crown is currently held by Wendy's.
KFC upped their fry game
Looks good, but I wonder if the Heston Blumenthal method would work well for these.
I don't like deep frying but i bet my kids would love these
Double fry takes less time and they perfect no soggy
Underrated
That fridge is going to sue you one of these days. Be careful!
For a food that’s so ubiquitous, good fries are surprisingly annoying to make at home
I'll bet the oil part would be amazing using thawed out frozen fries. The come pre-flippy, floppy

There's something about vinegar in the water for potatoes. I do this too, even for mashed.
Can you make a vid making various items in a air fryer?
The whole reason people are putting fries in the oven is so they are lower calorie and healthier coating them in oil. You may as well deep fry them
What potato peeler are you using? Looks like it does a good quick job.
I just use store brand frozen fries straight from the freezer, slather them with a coating of oil, place on an oiled cookie sheet, and bake for 25-35 minutes (total time depends on how dark you want them), turning them at least once.
Beef Dripping as oil.
Flip every 15 mins
Cook time approx 1hr, 150 fan.
Maris Piper.
Chunky Chips more sturdy.

Twice as much oil as for those of us, twice as much gas. I mean, just fry them.

That's so much work. Mcdonalds does delivery now you know
Use avocado oil only if you’re watching your gut health, and I wouldn’t use that much, cause my fire alarms would go off! But I do love your recipes!!

Hehehe: pour ….one litre? Of oil and then fry them using the oven Be careful no splashing boiling oil all over when tossing the fries 🍟

How do we make baked fries suck less? Fry them. BRILLIANT!
The point of oven fries is to avoid the oil. If you deepfry them in the oven, why not just deepfry them?
This is just frying with a bigger electric bill
3 minutes .😮
Sooo just fry them?
