How to Cook Perfect French Fries like in a restaurant!

- #shorts Making French fries is certainly not rocket science but there are a lot of elements to consider in thriving for perfection. Firstly you want large oval shape potatoes for the best cuts. You want the right size, 1 centimetre or just under half an inch is the optimal size. Smaller and they will be too crisp with more oil, larger they will be too moist and mushy in the centre. You don't have to use a ruler, it's just a guideline, a little less or more won't make any difference. For the oil, you can't beat the taste of beef dripping, but for healthier reasons it's best to use vegetables oils, I like Canola, peanut, sunflower oils. You can use the one you like, but the secret is that it has to be fresh. You can use it several times but the older it gets the faster it will reach smoking point resulting in darker fries with less crisp. Use a large pot and never fill the pot to more than half full. Use a good deep fryer that contains a large quantity of oil, otherwise make them in small batches to avoid the oil cooling down too quick once you add the fries. I have included a chili salt recipe to bring them to another level, but if you're a purist at heart, then simply use a fine salt.
You can also blanch the fries then refrigerate or freeze for later use. But if you want them straight away, let them cool down before the second fry. #shorts

I boil mine for 5 minutes, dry them, then fry them. It makes them crispy without having to nearly burn them. 😄👍

1. Clean/Rinse your potatoes
2. Cut them into fries
3. Rinse until water runs clear
4. Cook them in boiling water until your fork punctures it without much effort. The fries still need to retain their shape. Boiling time depends on the potato. Some are more dense than others, requiring a longer boil time.
5. Remove from boiling water and allow to cool. I usually just throw them in some ice water and leave in the fridge for a few minutes. The ice water speeds up this process.
6. Drain the water and dry with paper towels. I usually fold them over 4 times so that it can absorb as much of the water as possible.
7. While your fries are drying up, heat up your oil.
8. Sprinkle the fries with Bicarb/Baking Soda/Baking Powder.
9. Fry and season
I know it's lengthy, but it's really good fries and worth the effort

We do measure our fries in culinary school... We just don't use measuring tape or whatsoever 😂... If we cut it correctly we can get the real measurement... If we want to know if it is accurate, we will measure at the pic that our chef has drawn

amazing , you don't have to wait 2 days like all these other chef videos I watched telling you to chill them , fry them , chill them , its nonsense , no matter WHAT YOU DO a fry will lose its crisp , you need to eat them right away . This will work really well and is even easier than my fries where I par boil them in vinegar water to get the inside cooked fluffy .

Boil the cut potatoes until you can pierce them, and also add a little vinneger when boiling. The boiling removes the excess startch, which tends to make them fluffier inside when frying. The vinnegar will increase their crispiness when frying.
@annistar9693 make sure you dry the boiled fries before 1st and 2nd fry.

you can skip half these steps, just give them an ice water bath after cutting them(couple of minds 2-3), then fry.

Sabego, Maris Piper, Idaho, Coliban, Bintje go for low sugar content, therefore new (fresh) not old potatoes.
More simply, you want Russet potatoes. You want a variety that isn't very starchy.

I use tongs.
I don't wash them after cutting to retain the starch. I place them in cool oil, then fry them for approximately 7 to 9 minutes Then get them out the pan soon before the outer layers of fries solidify to lets moisture evaporate . Afterward, I let them rest for 30 to 60 minutes to release moisture from the outer layer. Next, I fry them again, this time over medium-high heat, and wait for about 12 minutes until they're ready to eat. I don't add any seasoning only good brand ketchup

No salt and your recipe takes longer. No thank you.
Do I have to peel them?
this level of crispiness can be achieved by the following steps (adjust as needed)
1. Cut your potatoes (optionally peeled) into sticks
2. Boil them in water consisting of a tablespoon of salt for seasoning, tablespoon of baking soda to make it crispy, and white vinegar to keep them from breaking, depending on how hot your water is adjust it, but make sure that they are not cooked too much, they should be fully cooked when frying, not when boiling
3. Drain them and dry them
4. fry them at a low temperature like 320 for a few minutes until they begin to look cook through, and cut one open to see if it's cooked through and fluffy, you can also do it at around 280 for 6-8 minutes but i havent done this and i don't know if that's going to overcook them, they should not have any color
5. make a batter for the fries consisting of whatever seasonings you want, but it should be aout the consistency of a pancake batter, and to achieve the batter state just use flour and seltzer water unflavored preferrably
5. freeze the fries and make sure they are frozen solid when you use them next
7. drop them frozen straight into the hot oil, probably around 350-400 but 400 most likely isn't safe when it is frozen, i cannot guarantee this is always safe although it has been for me so please be very careful and try not to fill your oil up over 1/4 of the way when doing this, please don't do it over halfway, and never ever do it over 3/4
8. fry them until golden brown, take them out, and toss them with salt immediately or it won't stick
9. let them dry on a wire rack, if you use paper towels they will steam and all of the crunch you worked so hard for will be gone
10. eat it and you better enjoy it you wasted a good couple hours of your life on it

Please advise: ➡️➡️ when using stovetop and instructed to a certain Temp, like 350, HOW do you know WHAT setting that equals on the STOVE TOP DIAL?? The U.S. stoves have low, medium and high, with in between grading/adjustments used. Do we test with a food thermometer or KNOW which one IS 350 or whatever degree indicated?? ➡️ This issue happens a lot and can be confusing or useful to know. TY
Use an instant read thermometer.
Just heat the pan with the oil on medium head and use a temperature thing to sea how hot it is and add the frites in when it gets to that heat
