What hygiene factor are you referring to? The guy cutting raw potatoes with his bare hands? No mask? What microbe do you think is surviving a 350 degree fry for several minutes? Meanwhile, you just handled the door handle to get into the restaurant, paid the cashier with paper and coins, went to the restroom without washing your hands, and while you were waiting read an article or two on your cellphone that you haven't sanitized in 4 years. But it's the guy that wasn't wearing gloves and never touched your fries' fault.
I'm no food expert but at 0:09 you could raise the potatoes on a stand to the cutter's level that would make the process faster and it's better for your back!
