Can I ask which potato extract you have, & if you have used it, would you recommend that brand? I only ask because I've bought various brands of baking extracts & have noticed they are quite different from one another. Thank you for any further info on the one you use. =)
@@RV-there-Yet The brand I bought is from One On One Flavors and is the Mashed Potato flavoring. I bought it on their website. I have not used it yet, so I can't vouch for it. It was recommended to me from someone who uses it in mashed cauliflower to get more of a potato flavor. I thought this recipe would be a good one to try it out! It was under $5 for the bottle.

Unfortunately almond flour will not work in this recipe. Coconut flour is very absorbent and requires a lot more liquid and binders so it cannot be substituted with any other flour
Yes it has more carbs, but generally you use about a third of the volume (as almond flour) and increase the liquids. Besides oxalates to worry about, coconuts are not nuts for those of us with nut sensitivity. Bonus - Coconut is cheaper and we use less.

Almond flower is very high in oxalates. I was eating almond flower regularly and got kidney stones. No oxalates in coconut flour.

You don't have to use potato extract if you don't want to. Adding the monkfruit and cinnamon sounds yummy 😋

I cannot eat Coconut, almond or any nuts flour. Do you know of anything else that would work?
You can try lupin flour but your liquid to flour ratio would be much less liquid

They probably would taste good as chips. I'm not sure how good they would crisp up. You will probably have to press them out very thin.
