    1/2 cup allulose

    My recipe: 2 cups cream, 1 cup whole milk, 3/4 cup granular allulose, 1 tbsp vanilla extract, pinch salt. This stays scoopable in a minus 6 degree freezer. No need for liquid allulose. Optional...1/8 to1/4 tsp guar gum to give it a little more body. Yes, whole milk isn't keto. There's so little of it per serving it doesn't matter, and it lightens up the ice cream considerably. This ice cream with your brownie recipe is a dessert for even non keto diners.

    Loved this recipe but agreed with another commenter, I missed the custard ice cream taste. I decided to try adding 2 TBLS of egg yolk powder to the finished product and blending well. It was DELICIOUS! Did a side by side blind comparison with family and everyone preferred the one with powdered egg yolk recipe. It does not make it taste “eggy” but gives it a depth and richness of flavor.

    I made this ice cream, and I did love it. I wanted more of a less airy feeling, so I add a little less than 1/4 tsp of Guar Gum and it made it so creamy, a tad firmer but very scoopable. For anyone wanting a less whip cream type feel. I love you so much Victoria and all of your recipes. God bless you always. 😊

    Made and it stayed soft. Even forgot about it for a few months and had the last of it tonight. It was still soft and creamy. Glad to find this video again to make some more. I will be using less allulose next time as it was a little too sweet for my liking but otherwise the best and easiest keto icecream recipe I have come across.

    I just made this as directed and added Oregon Hood strawberries. They are in season for about 3 weeks in June. Luckily I had some in the freezer. Delightful! Thank you. ❤

      Ok I've been fiddling with this after making the main recipe. I've put it into smaller jars or containers, I've made it using yogurt and I've made popsicles. None of those were soft when taken out of the freezer like the original recipe in the video! I thought the liquid alluose was the key ingredient for keeping it scoopable but apparently it's not? Is it the powdered alluose or the combo of both? I realize this is an older vid and no one has commented on the first comment I posted but if anyone can help I'd appreciate it. Meanwhile, back to the experimenting.

    I'm adding this comment on this ice cream...I just made it this morning, I made Mocha chocolate chip (using Lilly's chocolate chips)...OH MY GOODNESS this is the creamiest ice cream I have ever tasted. My daughter and husband really loved it as well. If anyone is hesitating on making this don't..it is awesome! You won't need nor want to eat tons as it is very satisfying. Thank you Victoria!!!!     Yes!!!🙌🏻 I bought liquid allulose just for this purpose, to test it i put about a tablespoon in a small ramekin in the freezer for 2 days, it never froze solid! Can’t wait to try your recipe! Btw, I made your strawberry 🍓 scones recipe … aMAZing 😋 🙏🏻

    Thank you for this lovely recipe....this is gonna keep me off of soft serve forever ! I have been on keto for awhile and am always looking for substitutions for my "sweet" tooth. I made this ice cream!
    SO simple ! It froze overnight and I could scoop it just like real ice cream in the morning. I had ice cream for breakfast ! !
    I did not have liquid allulose on hand but I did have some alcohol...called Triple Sec...that I have had for YEARS and have never used...I put in one Tablespoon is all and it gave this ice cream a little extra flavor, just barely can taste the triple sec...thank u for this recipe, so tasty and icy cold and creamy !!!!

    I read some of the comments, and since I like chocolate (understatement), I made a couple of additions. As someone else mentioned, I added egg yolk powder, but just one Tbsp. Then I added 1 1/2 Tbsp of Dutch processed cocoa powder. After it was mixed, I did run it through my ice cream maker, and in the last five minutes, I added 1/3 C Lily’s dark chocolate chips. It’s so good, even my husband likes it, and even better the second day after being in the freezer overnight. So nice to be able to have soft keto ice cream without all the multiple gums that usually have to be added. Thank you Victoria.

    I make my vanilla with
    A pint of Horizon organic heavy cream
    2 Tablespoons homemade vanilla
    Pinch of pink salt
    Pyure sweetener (powdered) to taste.
    Also sometimes I add Hershey's Special Dark cocoa powder just a smidge to half of the batch to have vanilla and chocolate flavors.
    My homemade vanilla is made with vodka and I think the vodka is what keeps the ice cream so super soft.

    I made this as per the recipe and it WAS good, but it’s really just frozen whipped cream. But what it DID do is give me some pointers on using allulose AND liquid allulose in my standard ‘custard’ ice cream (keto) mix. Fabulous!

    I made a chocolate version, same recipe but added 1tbls cocoa powder, 2tlbs of Lilliy's milk choc chips chopped up, total of 3tlbs liquid allulose. It taste like a choc moose.

    I just made this and hoping it comes out, I made strawberry, the only thing I didn’t do is chill the bowl I hope it still works and it whipped longer then 3 minutes.

I had been wondering what sweetner you use most, this video answered my question, plus so much mor information about Allulose.     Thank you so much for this recipe. I had to wait 10 days for iHerb to deliver the allulose powder & syrup to the UK but it was worth the wait. My vanilla ice cream tastes great and is a real treat in this heatwave that we are currently enjoying. I also ordered some Walden’s chocolate, caramel & blueberry syrups. I might swirl some into my vanilla base mixture to make a ripple style ice cream next 💕

    The flavor was very good. Very easy to make. But it isnt ice cream. Its frozen cool whip, which is fine with me because frozen cool whip was one of the things I missed the most from my "former life." I was sad to give it up. But I'll keep looking for a different ice cream recipe. Currently im still buying Rebel but its so expensive.

      1 cup of powdered or crystal allulose. 1 cup of water. Add both to a pot and stir while bringing it to a simmer. When it is simmering, take off the heat and let it cool. It is then ready to use.

    No no, the best is vanilla custard ice cream with yolks cream and your Keto milk! Just use allulose xylitol blend instead of sugar just standard custard ice cream recipe it’s perfect with your Keto milk

    Since Splenda's version of Allulose is made from corn, is the corn non-GMO? Do you know? Also, allulose is only 70% as sweet as table sugar, so it can't measure 1:1. Thanks for all your hard work and Happy Resurrection Day!

      I do not know. But this allulose is a 1:1 with table sugar. There is non gmo and organic allulose but it’s the 70% as sweet as sugar but if u over use it your baked items will burn quickly

    My wife and I tried making your recipe. We liked how easy the recipe was BUT we found it too "fatty" in taste, too sweet, and it didn't harden enough. I think we can change the consistency and sweetness by simply reducing the liquid allulose. BUT HOW DO WE MAKE IT LESS "FATTY TASTING"?

      We had the same problem. The texture was more like whipped cream. We couldn't eat it.

    I’ll have to try. I use xanthum gum 1 tsp instead of allulose.

    Hi Victoria, hope this message finds you well, going through your ice cream video. I’ve seen it in the past, and I’ve been looking for liquid cellulose for the longest time. Apparently, Amazon doesn’t deliver to my area at one point then just recently checking on Amazon. It was saying that They Could Alley, Lows is currently unavailable and that it may not be coming back to Amazon. Now, can you recommend any others liquid sweetener that could help prevent ice cream from being a solid rock. Or possibly is there a way to make your own liquid Alieu los that would stay a liquid. I am so looking forward to your reply, and wishing you all the best all the way from Toronto, Ontario Canada.❤

      I’ve used xylitol in my keto ice cream and unflavoured gelatine to keep it from freezing. I can’t get allulose also

      @@grogtgs Allulose is apparently not approved by Health Canada; weird. You can source liquid Allulose from some US health sites...Lucky Vitamin for eg and it will ship to Canada. A bit more costly but good to have in your Keto cupboard for these and other recipes.

    Hello Victoria, let me tell you that I find you amazing!!! Such a lovely young lady.
    I don’t have allulose at home and couldn’t wait to make this ice cream but used erithrytol and Zero Choc vanilla syrup. Sadly it froze rock hard although it’s flavor came out great. I live in Guatemala and can’t find liquid allulose, what can I use instead to prevent it from becoming so frozen?

      Awe hi! Ok so it’s the allulose that keeps your results soft. Erythritol causes hardening. Unfortunately u cannot substitute allulose here. Must be 100% allulose

    Victoria, have you tried making it in a Cuisinart Ice cream maker that has a compressor ?
    And next question, Have you left your ice cream in the freezer, overnight or at least 8-10 hrs, and see if it's STILL scoopable ?

    I made this ice cream twice and followed recipe unfortunately both times it di not stay soft when frozen. I am confused as to why it did not stay soft and is hard as rock. I would appreciate any feedback BTW I love your flour and many other recipes

      You didn’t use liquid allulose and granulated allulose. U cannot use a different sweetener

    Why not just squirt chocolate flavored sugar free syrup instead of vanilla? There’s all different flavors of sf syrup

    Can you substitute swerve or monk fruit liquid for Allulose sweetener ? I cannot get Allulose here in Canada 😊😊

      The allulose is the reason why it stays soft the other sweeteners get hard

    I can't tolerate Allulose, so for me, I add egg yolks to mine, and it's the best. But for those who can tolerate Allulose, you're lucky!

      Powdered erythritol will re crystalize creating a grit :(

    I made this Icecream. After 4 hours it was good but the next morning it was hard as a rock. Had to put it in the microwave to dish it up. It had a taste like frozen whip cream. Any suggestions. My husband did not like it

      Something wasn’t done right so sorry… u have to use liquid allulose for one and maybe beat to stiff peaks if soft ones get too hard

    This tastes great. However part of it got really hard.I am wondering if it could be because I used swerve confectioner sweetener.

    To make chocolate keto ice cream, do you simply add cocoa powder? Or, how would you add flavors to this ice cream?

      Yes! Ok if u want Oreo flavored chocolate ice cream use black cocoa if regular use cocoa powder but add the powder to the HC while it’s a liquid before u mix it. I don’t know how much tho I haven’t done it myself :) sounds delicious

      I don’t recommend it because it’s the liquid allulose that make the results “soft” without it, it will be very hard

      1 cup water
      1.5 cups allulose "do not use erythritol"
      1/4 tsp cream of tartar
      1 tsp lemon juice
      -Simmer all ingredients for 20 minutes
