I love this milk, however I do the whole milk recipe and prefer mine with a full cup of whipping cream per 1/2 gallon recipe. It is so rich and creamy, I find it tastes just like milk. I did see on your recipe card on Pinterest, the dry milk powder was omitted by mistake. Thank you Victoria, you make following a Ketogenic diet a delight.

Awesome! This will be great in Keto cereal! For my home espresso, I make a faux milk that's higher fat than your recipe: 1 oz heavy cream and 4 oz water plus 1 Tsp of Torani sugar free vanilla syrup. It tastes like milk to me, but it's creamier so maybe it's more like faux Half 'n Half. But I'm going to make your milk for sure, especially in recipes. Thank you!
I made this as whole milk but cut the recipe in half to try it first. Allulose is too sweet for me, so I added the other 3 ounces of cream & enough water to make 48 ounces total. Creamier but not as sweet. Next time I may cut the Allulose down even more. Still it’s very palatable. It’s also delicious with just a drop or two of pure vanilla added to a cup!
I made the whole milk tonight and used my vitamin on low to mix the xantham gum and allulose first. Then I added the HWC and again on low for maybe 10 seconds. Foam was minimal. In the fridge to chill and will try it in the morning. 😊
@@Metqa it turned out great. I used it all mostly in my Keto Chow shakes. I’m thinking this will replace the extra expense of almond milk and macadamia milk where I buy HWC all the time.

@YeshuaMyKing yes. For cereal, you can do keto granola, Magic Spoon, Catalina Crunch, etc. There are several keto cookie brands out there, or you can make your own with keto ingredients. These aren't everyday foods for me because they are calorie dense and I'm still losing weight. I do, however, enjoy them once in a while.
I thought I was going crazy. I knew I had watched you make keto milk but I couldn't find the video. That's when I realized you removed the original and replaced it with this. I love the alternative milk for when you or other recipes call for almond milk or something similar. I don't usually have that in the house. But I have all these ingredients at all times. I love whole organic milk but it's SO expensive now so I've been getting half & half and diluting it with cold water I keep in the fridge...and I add vanilla extract because I'm addicted the vanilla too! @victoriasketokitchen Victoria, did you know that people who are Lactose intolerant should be able to use this milk, as it's made from heavy cream? We discovered Heavy cream has a really low level of Lactose compared to Milk, so it's usually tolerated by those with Lactose problems... another perk!
What a godsend. Have really missed milk....and this is the BEST sub I have ever tried....so much better than almond milk et al. There are some good keto cereal options out there but without the milk, what's the point. Well, keto granola is back on the table. Can wait to have a glass of this with some of the keto peanut butter cookies as well. I had everything already but the milk powder....now I am good to go any time I need milk. THANK YOU !!!

Good study of how to create your own milk. Nice and simple as well - will go for the whole milk. I have used heavy cream for everything and not used milk for a long time. Your milk creations out of the heavy cream enable the cream to be spread out a lot further. Meaning it becomes cheaper to use the cream for the different uses you apply it. 😊

Excellent idea for use in baking. Low carb milk is so expensive. I just made some muffins and used the milk recipe. I'll even have some milk to drink with them.

Thanks for sharing this. I've just been eyeballing a mix of HWC and water when I needed "thin hwc", but I see I've not been thinning it enough. I don't think I'd be able to use 1/2 gallon in a reasonable time so, from my often imperfect math, I get -- 8 oz. water, 1.5 Tbsp HWC, 1.5 tsp allulose. No need for xanthum gum if I use it right away!
@ScooterGeek I will try your measurements because I don’t think i’ll be using a half gallon of milk in a reasonable time as well. I rather make the milk as I need it right away for like a bowl of cereal, dipped in cookies, etc. I don’t even think I have enough refrigerator space if i make a half gallon 😅

I'm amazed that there's no commercially available version of no-sugars dairy milk in UK supermarkets. Instead of taking the fat out, they should take the milk sugars out. I was hoping that lactose free milk would be an option, but then I found out that instead of taking the lactose out, they just add an enzyme to break down the lactose into simple sugars. This is a good work around and I'll definitely try it. I use nut milks too, but I like my teas/coffees with real dairy. According to new research, dairy fat can actually be good for you!
Actually, in medical terms (i don't know about dietary terms) but anything 0.6 or greater is rounded up to 1.0. Anything 0.5 or less is rounded down. Like I said, I don't know about dietary measuring for rounding purposes. But I love your site, your recopies and your delivery. Well done!

If you are buying Keto products, your best bet is to always round up the total carbs by 1 per serving to get a more accurate count.
I made it and love the taste...but, to me, it was a little too sweet, so I'll just back off the amt of Allulose next time! Apparently I didn't do the immersion blending correctly because mine separates in the fridge, but a quick shake brings it back to milk.....By the way--would you consider trying to perfect a keto version of Nestle's Sugar Free 'French Vanilla Coffee Creamer'? That's one thing I haven't given up...Perhaps tweaking this milk recipe and adding some vanilla extract may just do it! Thanks!!!
For more fat, you may want to aim for the CA standard of 4% fat for whole milk. You can sell it as whole for less, but 90% of the milk I see here is 4% whole. I drank 3.5% once and I could tell.
I have watched a lot of your videos as of late. I appreciate all the work you have put into them. I am truly troubled by this one today. I live in Canada and can not find a good source of real 35% heavy cream or whipping cream. Everything I can find labeled as such is not real cream. It's a gonglomeration of products starting with skim milk as a base, then adding in an extract from red seaweed and gelatine as thickener. I recently found real heavy cream in a health food store. It's a five hour drive from here. If you have any Canadian viewers who could help me out, I would be grateful. Always read your labels.
Thank you so much for this recipe. I’ve been wanting a low carb milk as I drink a lot of tea… I’ve been using lemon slices or almond milk but they’re just not the same as real milk! I found this recipe good but tasted a little thin in tea, so I swapped out part of the water for unsweetened almond milk and it works really well. It gives it a little more body without too much of a nutty taste. (I tried protein whey powder too but that didn’t seem to work.. )
I appreciate your comment because the thing I tend to find lacking in homemade milks is the creamy body , or the opposite the "Thinness" . I've tried adding xanthan gum before, but maybe I didn't add enough. I haven't tried this recipe yet, as I've pretty much given up on wanting milk as a beverage and just avoid recipes that need it as I don't drink the alternative milks or use them fast enough to make it worth buying and opening for 1/2 cup or whatever ( do nut milks freeze okay?) I do have some powdered cream in the pantry, I see victoria mention buttermilk powder, perhaps I can add 2Tb of Dry cream to the recipe for more body.
Because the cream would expire for me I poured it into chocolate molds and froze them now I break off 12 squares of cream and defrost it in 900ml water also I use acacia gum is emulsifier

Don't get frustrated. I stopped losing weight on keto from eating to many calories. The keto sticks didn't differentiate between my high fat diet and burning fat . Think about OMAD or intermittent fasting to get you back in the zone

@@victoriasketokitchen Manufacturers can claim zero carbs if it's less than .5 carbs per serving. Heavy cream is actually .4 carbs per serving so 1C heavy cream is actually 6.4 carbs per cup. Its tricky marketing...so your recipe for whole milk would be .6 carbs per cup..still the lowest carbs for a cup of milk! ;-)

Did u add the xanthan gum? That helps the texture as well as keeps it from separating too quickly. I still have to mix mine sometimes

One thing you might want to consider is adding potassium/sodium as well (even if it's only a little)

Apparently I didn't do the immersion blending correctly because mine separates in the fridge, but a quick shake brings it back to milk.....By the way--would you consider trying to perfect a keto version of Nestle's Sugar Free 'French Vanilla Coffee Creamer'? That's one thing I haven't given up...Perhaps tweaking this milk recipe and adding some vanilla extract may just do it! Thanks!!!

For more fat, you may want to aim for the CA standard of 4% fat for whole milk. You can sell it as whole for less, but 90% of the milk I see here is 4% whole. I drank 3.5% once and I could tell.

I have watched a lot of your videos as of late. I appreciate all the work you have put into them. I am truly troubled by this one today. I live in Canada and can not find a good source of real 35% heavy cream or whipping cream. Everything I can find labeled as such is not real cream. It's a gonglomeration of products starting with skim milk as a base, then adding in an extract from red seaweed and gelatine as thickener. I recently found real heavy cream in a health food store. It's a five hour drive from here. If you have any Canadian viewers who could help me out, I would be grateful. Always read your labels.

Thank you so much for this recipe. I’ve been wanting a low carb milk as I drink a lot of tea… I’ve been using lemon slices or almond milk but they’re just not the same as real milk! I found this recipe good but tasted a little thin in tea, so I swapped out part of the water for unsweetened almond milk and it works really well. It gives it a little more body without too much of a nutty taste. (I tried protein whey powder too but that didn’t seem to work.. )
I sometimes add 2 tbs of buttermilk powder if I want it thicker
I appreciate your comment because the thing I tend to find lacking in homemade milks is the creamy body , or the opposite the "Thinness" . I've tried adding xanthan gum before, but maybe I didn't add enough. I haven't tried this recipe yet, as I've pretty much given up on wanting milk as a beverage and just avoid recipes that need it as I don't drink the alternative milks or use them fast enough to make it worth buying and opening for 1/2 cup or whatever ( do nut milks freeze okay?) I do have some powdered cream in the pantry, I see victoria mention buttermilk powder, perhaps I can add 2Tb of Dry cream to the recipe for more body.
Because the cream would expire for me I poured it into chocolate molds and froze them now I break off 12 squares of cream and defrost it in 900ml water also I use acacia gum is emulsifier
What would be cool is if you could make keto Cinnamon toast crunch cereal so we could have a keto breakfast with keto milk?!

@@victoriasketokitchen Thanks, I use a culture that I've had for a long time, so the carbs should not go up. I freeze a couple of cubes from my completed batch to use the next time.
Hello Victoria, I love all your recipes, thank you for sharing them with us. I am a Type2 diabetic. I have been doing keto for 3 years, but have fallen off the wagon and struggling to get back on. I just watched your video on ketone levels. And your video about drinking ACV. I read in the comments where someone said they would love to have you do a “what I eat in a day…” I second that motion… can you do one of those videos? Do you journal your carbs, fats, proteins? Don't get frustrated. I stopped losing weight on keto from eating to many calories. The keto sticks didn't differentiate between my high fat diet and burning fat . Think about OMAD or intermittent fasting to get you back in the zone

@Glen Garbera Are we diabetics allowed to do OMED? I'll ask my licensed nutritionist but I'm certain he will tell me 'no'. Wish I could but low blood sugar events happen. I'm with you on the carbs and calories both count, in diabetic weight loss-especially the carbs.

I buy Costco heavy cream claims to be zero carbs on the label
@@victoriasketokitchen Manufacturers can claim zero carbs if it's less than .5 carbs per serving. Heavy cream is actually .4 carbs per serving so 1C heavy cream is actually 6.4 carbs per cup. Its tricky marketing...so your recipe for whole milk would be .6 carbs per cup..still the lowest carbs for a cup of milk! ;-)

Would it be beneficial to add some protein powder to the milk to help with frothing & shouldn't add carbs?
