Soul food in America has a specific meaning. I think you were meaning as food that's good for the soul, which is fine. American soul food is a specific group of foods that originated from African Americans in the south. There is also a style of music referred to as soul music. If it's a food that we grew up with, and brings back warm memories of our childhood, we refer to it as comfort food.

Normally we combine a protein, a veg or two, and some variety of cream based soup into a casserole dish (a baking dish 2" deep, 8"-9" wide, 11" long). Spice and season to taste. Bake for roughly 1/2 an hour. Some dishes go well with a cheese or crumb topping. The sky is the limit. There are no rules. If it turns out good, write the recipe down. If it doesn't, try something different until you get something good. The main point of casserole is fast and easy and good.

Her Carolina Crab Boil, for instance, wasn't even close to what it was supposed to be. I grew up in South Carolina and as I was watching the video, I was so confused! When it was completed, it turned out to be some kind of cold crab salad, which is as different from a crab boil as you could possibly get. Trust me... It's not that I want to give her a hard time. She's a lovely woman and it's obvious that she's a great cook, who knows her way around British food. But if she hasn't got the correct idea and recipe for a particular type of "American dish", she and James and Millie aren't getting the actual food that they wanted to try in the first place. I just want them to get the most authentic experience that they can. 😊

US casseroles usually have a protein, one or more vegetables, and a starch like rice or noodles. They are often made with a cream soup base. They're often intended to be pretty much the whole meal.

Chicken Casserole, there's probably a 100,000 different recipes for that in the US. My mom did one with yellow rice, sausage, poultry seasoning, cream of mushroom soup, I can't remember what else was in it but it was damn good.
You could take all of the same ingredients and put it in a crock pot before you left in the morning and it would be ready for dinner when you arrived homebto a house that smells amazing! I'd probably thrown rice in the bottom as well and add enough additional liquid to reconstitute the rice. Then you'd have your whole meal ready in the crockpot! ☺️

Generally southern food does not have much spice but is comfort food and in fact has Scottish and English roots. (I also suspect the chopped onions were meant to be finely chopped) MOST southern chicken casseroles have the meat off the bones and somewhat shredded and the top of the casserole is breaded almost like a pie crust. Not something you stir afterwards. But I am sure what you made is very nice. I wish I could smell it!
There are many casserole's that got their start as a way to get rid of left overs. Some left over veggies, couple of pieces of left over chicken or ham, some stale bread etc. And when some one stumbled over a leftover casserole that they loved they would then recreate it from scratch. Many pot luck suppers at church, get well meals delivered to neighbors, funerals and other events these dishes were modified, and expanded up on until you have an entire ecosystem of casseroles. I would challenge you to make a leftover casserole of your own. Cheese and condensed soups such as cream of chicken or cream of celery tend to be staples for the liquid in the casserole, but they are not a requirement. I would love to see what your imagination comes up with!

I make it pretty much the same but add quartered potatoes to dish and every 15 min. Baste the chicken and potatoes see with the pan drippings .Great stuff

I've eaten a lot of casseroles, but I don't know if I've eaten this before. It does look pretty dang good and that seems like it would be a dish with rice. Vicki, with all this nice cold weather, stews are popular in the south. Plus, a good homemade chicken noodle soup. A warm pot pie with chicken, beef, turkey,, or your husband being a fisherman, a large seafood pot pie would be nice. 😊

If you enjoyed that version, I suspect you might like Country Captain (a mild curry casserole that was a favorite in the South in the 1930's, apparently from an India-travelling ship's captain's recipe, and a favorite of president Franklin D. Roosevelt). Many of the same ingredients, but with curry powder, garam masala, currants/raisins, bacon, carrots, tomatoes, toasted almonds, and parsley, served over rice. I've liked the recipe from the Lee Brothers (Southern restauranteurs -- recipe on the food network's site).
For a second I thought you were cooking at 160F . 160C is 320F phew ! lol 140C is 285F You need a stand to display the food near the camera ? If you find it t too spicy, you can stir in a bit of milk or cream in it.

Mine I do chicken, some cream of chicken soup, cut up and lightly sauté some onion & celery, throw that in along w/ some boxed stuffing, maybe some frozen mixed veg (carrots, peas, corn niblets, green beans) and I think I toss in some milk, half & half or cream too. Can sub in cream of mushroom soup to change it up a bit. One pot meals like that are great. TBH, there are very likely way more than 50 versions of that dish. Darn! Vicky didn't try it! Just the kids did! :(
That looks Awesome! If you are looking up recipes on a uk search engine you may be getting more a uk version of a recipes? If you go through an American search engine you may find more authentic American versions of a recipe? Casserole does have a ton of different versions though.
This looks great! I might call it a baked chicken dish instead of a casserole, though as it’s missing a starch (pasta, rice, potatoes or cornbread), a creamy sauce, and the chicken pieces are large. I’ll definitely try it, but with less cayenne (or a little hot pepper flakes).
Made to stretch a meal and have leftovers. Southern style chicken casserole will have butter, cream or cream soup, rice, one veg (usually peas), and a small amount of onion and garlic. I have not seen one with olive oil but it may be raw chicken that needs cooking. I have also not seen so many veg. But, hey, it is a casserole. No rules. I just don’t think this is “Southern.” Which is perfectly fine.
That is not a casserole. That's just good seasoned baked chicken. Add a cup of rice or a package of noodles or even some cubed potatoes and extra water or broth and it's a casserole.🎉
They mean chicken broth not chicken gravy. The gravy will burn. You need to follow recipes exactly. Read it through first. It looks a lot like chicken cacciatore which is made on the stove.

No!!! Never on the bottom shelf always in the center it will burn to a crisp. American recipes are made for the center shelf only. The rack is movable.

It's better to use your hands. Was the recipe specific about the chicken? Normally they use boneless chicken for casserole, boneless skinless thighs or boneless skinless chicken breast 2hich we call cutlets. I do know in Australia cutlets of any kind mean on the bone. If it's an American recipe using cutlet it's always boneless chicken breast or boneless thighs.
I’m from Vermont, we had family size packages of boneless and skinless chicken breast for $2.99 a pound, I made a lot of different baked chicken dishes, the first one, I made chicken stew, second one, I cooked the chicken , the night before, put it in the refrigerator, the next day, I chopped the chicken, cooked a bag of egg noodles and added a can of cream of celery soup and mixed it all together and baked it until the Italian bread crumbs got crunchy.
Don't use onion salt or garlic salt the salt content is unreal and on top of the salt in it, the salt amount would make it unedible. Find garlic powder and onion powder
Not what I would call a casserole. I've never seen one with whole pieces of chicken in it. Most casserole have a pasta or rice and cream soup and cheese. But there are many ways of doing it.

As a southern woman I wouldn’t call this southern”. People all over would make this. Casseroles , which there are 100s of them in the US are made all over the country would make this. Casseroles are more associated with the Midwest. That is definitely not soul food. Soul food Iare things like fried pork chops, ox tails, chitlins and collard greens.

I made chicken with wild rice, I use vegetable stock for the rice instead of the water,it calls for.

What she made is literally the definition of a "casserole" in the UK. Look it up...

It could be called baked chicken in the US, but nothing about that would make it an "American Classic" or "authentic American" in any way. And a British casserole made in the UK is most definitely not "soul food" from the southern United States in any way, shape, or form.

I make it pretty much the same but add quartered potatoes to dish and every 15 min. Baste the chicken and potatoes see with the pan drippings .Great stuff
Add flavor water dilutes flavor, just replace with more stock. Smothered Chicken, it looks great.

I would have chopped the onion and bell pepper quite a bit more so the small bits are included with the bites of chicken.
I'd serve it with rice. But potatoes would be nice, too.
Although it looks good, it's definitely not soul food. It's more in the category of comfort food. Soul food is fried chicken, turnip greens, black-eyed peas and much more.

If you enjoyed that version, I suspect you might like Country Captain (a mild curry casserole that was a favorite in the South in the 1930's, apparently from an India-travelling ship's captain's recipe, and a favorite of president Franklin D. Roosevelt). Many of the same ingredients, but with curry powder, garam masala, currants/raisins, bacon, carrots, tomatoes, toasted almonds, and parsley, served over rice. I've liked the recipe from the Lee Brothers (Southern restauranteurs -- recipe on the food network's site).

Mine I do chicken, some cream of chicken soup, cut up and lightly sauté some onion & celery, throw that in along w/ some boxed stuffing, maybe some frozen mixed veg (carrots, peas, corn niblets, green beans) and I think I toss in some milk, half & half or cream too. Can sub in cream of mushroom soup to change it up a bit.
One pot meals like that are great.
TBH, there are very likely way more than 50 versions of that dish.

That looks Awesome! If you are looking up recipes on a uk search engine you may be getting more a uk version of a recipes? If you go through an American search engine you may find more authentic American versions of a recipe? Casserole does have a ton of different versions though.
This looks great! I might call it a baked chicken dish instead of a casserole, though as it’s missing a starch (pasta, rice, potatoes or cornbread), a creamy sauce, and the chicken pieces are large. I’ll definitely try it, but with less cayenne (or a little hot pepper flakes).

Made to stretch a meal and have leftovers. Southern style chicken casserole will have butter, cream or cream soup, rice, one veg (usually peas), and a small amount of onion and garlic. I have not seen one with olive oil but it may be raw chicken that needs cooking. I have also not seen so many veg. But, hey, it is a casserole. No rules. I just don’t think this is “Southern.” Which is perfectly fine.
It sounds like a stew you would serve over rice. They do some of these kinds with seafood in coastal south.

She could probably do a chicken fried steak but they would need a smoker to do a Texas BBQ. Plus remember what they call BBQ is what we call grilled.

That is not a casserole. That's just good seasoned baked chicken. Add a cup of rice or a package of noodles or even some cubed potatoes and extra water or broth and it's a casserole.🎉

They mean chicken broth not chicken gravy. The gravy will burn. You need to follow recipes exactly. Read it through first. It looks a lot like chicken cacciatore which is made on the stove.
When a recipe from the US list 'Bell Peppers' it is something completely different. I have made something similar to that.

It's better to use your hands. Was the recipe specific about the chicken? Normally they use boneless chicken for casserole, boneless skinless thighs or boneless skinless chicken breast 2hich we call cutlets. I do know in Australia cutlets of any kind mean on the bone. If it's an American recipe using cutlet it's always boneless chicken breast or boneless thighs.
I’m from Vermont, we had family size packages of boneless and skinless chicken breast for $2.99 a pound, I made a lot of different baked chicken dishes, the first one, I made chicken stew, second one, I cooked the chicken , the night before, put it in the refrigerator, the next day, I chopped the chicken, cooked a bag of egg noodles and added a can of cream of celery soup and mixed it all together and baked it until the Italian bread crumbs got crunchy.

Don't use onion salt or garlic salt the salt content is unreal and on top of the salt in it, the salt amount would make it unedible. Find garlic powder and onion powder

Not what I would call a casserole. I've never seen one with whole pieces of chicken in it. Most casserole have a pasta or rice and cream soup and cheese. But there are many ways of doing it.

As a southern woman I wouldn’t call this southern”. People all over would make this. Casseroles , which there are 100s of them in the US are made all over the country would make this. Casseroles are more associated with the Midwest. That is definitely not soul food. Soul food Iare things like fried pork chops, ox tails, chitlins and collard greens.
